Food As Medicine Series — CHW Solutions Health Coaching Corner. In this series, we are featuring Chili Peppers.

Chili peppers are a huge family of peppers enjoyed throughout the world. There are hundreds, if not thousands, of chili pepper varieties used to add fiery flavor to foods. Wild chili peppers were gathered in Mexico thousands of years ago, brought into India and Southeast Asia, and eventually found their way to Europe by the mid-16th century.

Here is a lighter take on the classic Mexican dish rajas, usually made with sliced poblano chilis and onions in sour cream. Chef Ramses Bravo’s version from Bravo Express highlights spicy, sweet, and tangy flavors. Full recipe here: https://chwsolutions.com/food-as-medicine-topic-chili-peppers/

Mental health services in the United States can be challenging to access and navigate for many individuals. For refugees and newcomers, these challenges are often compounded by additional barriers related to language, stigma, and the stressors of displacement and resettlement. While there’s no single approach that works for everyone, there are meaningful ways to help clients connect with mental health support that respects their unique backgrounds and cultural experiences.

Food As Medicine Series — CHW Solutions Health Coaching Corner. In this series, we are sharing Quinoa.

Quinoa (pronounced KEEN-wah) is considered an “ancient grain” because it has been cultivated for thousands of years and remains largely unchanged. But quinoa isn’t actually a grain: it’s a seed. Quinoa is grown primarily in South America including countries like Ecuador, Peru, Colombia, and Bolivia. It comes in many colors such as white, yellow, pink, orange, red, brown, and black, and has a crunchy texture and nutty flavor. Quinoa is also gluten-free so a good choice for those sensitive to gluten or wheat.

In this series, we are sharing Mushrooms

Mushrooms are widely known for their amazing health benefits. For centuries, mushrooms have been used as immune boosters, antibacterial agents, and to decrease inflammation and fatigue. While not a real vegetable, mushrooms are a type of fungus that contain a variety of powerful phytochemicals. Research shows that it is the high levels of ergothioneine found in mushrooms that is significant for human health.
