Ingredients
For the filling
• 1 pint (300 grams or about 2 cups) fresh blueberries
• 1 tablespoon maple syrup, or honey
• 2 teaspoons tapioca starch
For the crust
• 1 cup (96 grams) almond flour
• ¾ cup (67 grams) old-fashioned oats
• ¼ cup maple syrup, or honey
• 1 teaspoon baking powder
• ½ teaspoon salt
• 5 tablespoons coconut oil, solid
• 2 tablespoons chopped pecans
Instructions
1. Preheat the oven to 350°F and lightly grease a 9-inch tart pan with a removable bottom. Set aside.
2. Add blueberries, maple syrup, and tapioca starch to a medium bowl and toss until
3. coated. Set the blueberries aside while you make the crust.
4. Add the almond flour, oats, maple syrup, baking powder, and salt to a different bowl and whisk until combined. Add the coconut oil and use your fingers to work it in until coarse crumbs form and the mixture holds
5. together when pressed.
6. Remove a heaping ½ cup of the crumbs for the topping and pour the remaining crumbs into the prepared tart pan. Press the dough evenly into the pan. Pour the blueberries over the crust, making sure the juices stay behind in the bottom of the bowl.
7. Add the chopped pecans to the remaining crumble and sprinkle evenly over the top of the berries.
8. Bake for 40-45 minutes or until the filling is bubbling and the crust is lightly brown. At around 20 minutes, tent the tart with foil to prevent it from getting too brown. Let cool completely before slicing into wedges and serving.

Hello, food lovers and health enthusiasts! Ready to tantalize your taste buds with a delightful appetizer that’s as nutritious as it is delicious? Our Tangy Seed & Pesto Zucchini Bites are here to steal the show! 🍽️💚

Quick and Easy Recipe (20 mins | Servings: 24 Small Bites):
For Seed & Olive Paste:
1/2 cup raw pumpkin seeds (preferably sprouted)
1/2 cup raw sunflower seeds (preferably sprouted)
20 Kalamata olives
2 tbsp extra virgin olive oil
1 garlic clove
Salt to taste

For Pesto:
4 cups fresh basil
1 cup arugula
3 tbsp pine nuts
1 lemon, juiced
3 tbsp extra virgin olive oil
1 garlic clove
Salt to taste

To Serve:
2 zucchini, sliced into ¼ inch rounds
10-12 small cherry tomatoes, diced
1 tbsp sesame seeds
Basil to garnish

Directions:
Soak seeds if not sprouted, then drain and rinse.
Seed & Olive Paste: Process seeds, olives, oil, and garlic to achieve a crunchy consistency. Add salt to taste.

Pesto: Blend basil, arugula, pine nuts, lemon juice, oil, garlic, and salt to smooth consistency.
Assemble Bites: Spread pesto on zucchini rounds, top with seed mixture, diced tomatoes, sesame seeds, and garnish with basil.

Your Perfect Pre-Sleep Ritual:
1️⃣ No Electronics: Power down all electronics at least one hour before bed to calm your mind and prepare your body for rest.
2️⃣ Darkened Room: Create a serene environment by dimming the lights and embracing the tranquility of a darkened room.
3️⃣ Epsom Salt Bath: Indulge in a 10-minute Epsom salt bath to relax your muscles and release tension.
4️⃣ Floor Stretches( always check with your doctor first): Complete these gentle stretches to ease your body into relaxation:

On Back, Knees to Chest: Rock side to side 6 times.

No-Bake Chocolate Balls

Chocolate balls are simple, no-bake chocolate truffles that the whole family will love!

Ingredients:

2 plain rice cakes
1/3 cup Creamy Nut Butter (peanut, almond, sunbutter...)
1/4 cup Maple Syrup or sweetener of your choice
1 teaspoon vanilla extract
2 tablespoons walnuts, crushed
1/2 cup chocolate chips
2 tablespoons shredded coconut

Directions:
In a medium-sized mixing bowl, combine the peanut butter, maple syrup (or other liquid sweetener), and vanilla with a whisk until smooth.
Crumble the rice cakes. Crush the walnuts.
Placing rice cakes in a Ziplock bag and crumbling them with hands, then using a can of beans to roll over the bag to get an even finer texture.

Use the same method for crushing walnuts.
Add the crushed rice cakes and nuts to the bowl with the batter and stir well.
Reserve some of the nuts for topping.
Form Balls: with 1 tablespoon of the batter and pack it well.
The mixture makes about 10-12 balls depending on how big you make them.
In a separate small bowl or double boiler pot; melt the chocolate chips until smooth.
Submerge each ball in the chocolate and roll until they are coated.
Transfer to a plate or platter lined with wax paper to prevent sticking as you coat each.
Once balls are coated, sprinkle the shredded coconut and crushed walnut toppings.
Refrigerate for about 30 minutes until the chocolate has hardened.
