Hi! My name is Claire :)

🙋🏼‍♀️It’s been a while since I’ve reintroduced myself, so if you’re new here (welcome!!) here are some fun facts about me!

- I currently live in New York City (but originally from San Diego) 🏙️
- I’m a Board Certified Holistic Nutritionist & Nutritional Therapy Practitioner 👩🏼‍💼
- I work 1:1 with clients on their gut health (and hormones) in my virtual practice, Resilient Health and Wellness 💻
- I’m also a content creator on here (& TikTok)📱
- I have an older brother🧍🏼‍♂️
- I do not like scary movies 🙅🏼‍♀️
- I’m so passionate about holistic wellness because 9 years ago, when I was first dealing with my own gut issues, the conventional doctor I went to didn’t believe me & said not pooping for 5-7 days was normal 🫠
- I’m a BIG empath 🫶🏻
- I have a BFA in musical theatre (Go Orange ) 🎭
- I’m very type A 🗂️
- I love an early dinner reservation 🍽️

how to use food as thy medicine 😌

🧠There are MANY other factors that go into supporting our mental health (I.e. stress, trauma, your environment, exercise, etc.)

🤔But when it comes to food I feel like a lot of people know they should“eat healthy” but don’t know how to begin doing that

🌟Focusing on having 2 high AFS score foods per meal is a great place to start!

🛠️Food is what gives our bodies the nutrients (aka raw materials) to repair, restore and thrive!

HOMEMADE DÖNER KEBAB 🥙

🙏🏻Thank you & for your recipes!!

👇🏻Here is my take on this viral recipe

✨Ingredients: (Serves 2)

Potatoes
- 1 large potato
- 3 TBSP avocado oil
- 1 tsp each: salt, garlic powder, onion powder, paprika, black pepper

Döner
- 1 lb ground beef
- 1/4 onion
- 2 TBSP Greek yogurt
- 1–2 tsp each: garlic powder, paprika, chili powder, black pepper, salt
- Fresh lemon juice

White Sauce
- 3 garlic cloves, minced
- 2 TBSP Greek yogurt
- 3/4 cup mayo
- 2 tsp fresh lemon juice
- 1 tsp za’atar spice blend
- 1 tsp dried oregano
- Salt to taste

Toppings
- Tomatoes, diced
- Onions, thinly sliced
- Fresh herbs (parsley, cilantro, etc.)

1. Preheat oven to 425°F.
2. Peel and cut the potato into 1/2-inch slices.
3. In a bowl, toss the potato slices with avocado oil and spices.
4. Mix well until evenly coated.
5. Spread onto a lined baking sheet and bake for 30 minutes, flipping halfway through, until golden and crispy.
6. Add the onion to a blender and blend until finely minced.
7. In a bowl, combine the minced onion with the remaining döner ingredients.
8. Mix very well until fully combined.
9. Transfer the meat mixture onto a lined baking sheet. Place another sheet of parchment paper on top and roll it out until very thin (about 1/4 inch thick).
10. Remove the top layer of parchment and tightly roll the meat into a log.
11. Bake at 400°F for 15 minutes.
12. Remove from the oven, carefully unroll the meat back onto the baking sheet, and drizzle with fresh lemon juice.
13. Spread the meat out evenly.
14. Return to the oven and cook for another 5–8 minutes, or until the edges are slightly crispy.
15. To make the white sauce, add all ingredients to a bowl and mix until smooth.
16. Assemble your bowl: start with potatoes, add the meat, drizzle with white sauce, and top with fresh veggies and herbs.
17. Enjoy!

If you feel tired after doomscrolling all day, this is for you 🥱

🙃This is a lesson I’ve been learning recently

🤳Scrolling on phone our gives our brain rapid, unpredictable stimulation

🧠Every few seconds it’s working hard to process, react, anticipate (even though you’re lying on the couch & your body is still)!

🔋That constant input (and quick dopamine spikes) can keep our nervous system slightly activated

🫩Which is why you (and I!) can spend all day Sunday laying on our couch on our phones… and yet still feel tired by the end of it

🧩Doing things like crafts, puzzles and reading still does engage the brain but at a muuuuch slower pace & it’s more predictable

😇So the body gets a chance to rest & restore

ROASTED RED BELL PEPPER SOUP 🥣

🥶Bringing back this oldie but a goodie because personally I’ve been craving warm food and drinks in this freezing nyc weather

🫶🏻Here is my viral Red Bell Pepper Soup that is immune supporting, comforting & so easy to make!

✨Ingredients:
- 3 red bell peppers
- 1 sweet onion
- 8 cloves of garlic
- 3 cups of bone broth
- 1/2 can of coconut milk (I like guar gum free )
- 1 cup of tomato sauce (I like )
- Extra virgin olive oil (I like )
- Celtic sea salt/garlic powder/chili flakes/paprika to taste
- Fresh basil

1. Heat your oven to 450°F
2. Roughly chop the red bell peppers and onions
3. Add the veggies + 8 cloves of garlic to lined baking sheets
4. Drizzle with the olive oil to evenly coat everything
5. Add your salt and garlic powder to the veggies
6. Put them in the oven for 30-35 min. or until they start to get brown/crispy
7. In a pot, add 1 whole bag of bone broth, tomato sauce, coconut milk, chili flakes, paprika, salt
8. Heat that up on the stove
9. Once the veggies are done cooking, add everything into a blender and blend
10. Finely chop up the fresh basil
11. Serve your soup in a bowl with the fresh basil as garnish
12. Enjoy!
