🍀 One of our favorite St. Patrick’s Day dishes!

🥬 This roasted cabbage with lemon, capers, garlic, and olive oil is a good example. High heat caramelizes the cabbage while the bright, salty dressing adds a lot of flavor with just a few ingredients.

💰Cabbage is also inexpensive, seasonal, and naturally rich in fiber and vitamin C.
Small choices like this are often how sustainable habits actually begin.

🤩Using ground chia seeds as a binder in baking.

💪I combined chia and flax with water to create an egg substitute, then used it in a simple lemon olive oil muffin.

✅Grinding chia seeds may help improve the absorption of certain nutrients compared to consuming them whole, while also making them more functional in recipes like this.

It all comes down to macronutrients — protein, carbohydrates, and fats. These are the main nutrients your body needs for energy and function.

Carbs are your body’s quick energy source ⚡
Fats help with hormones and long-lasting energy 🧠
And protein? That’s your building block for muscle and repair 💪

👉 Protein and fiber are your best friends.

Protein slows digestion and helps reduce hunger hormones, so you naturally feel fuller.

Fiber, found in foods like veggies, fruits, legumes and whole grains, adds volume to your meals and keeps you satisfied longer without adding a lot of calories.

So when you combine protein + fiber in your meals, you stay full longer, snack less, and it becomes way easier to stay in a calorie deficit, which is what actually drives weight loss.

🥒 Smashed cucumber salads are one of the easiest ways to add more plant foods to your meals.

👩🏼‍🌾 I picked these cucumbers up at the farmers’ market this week and turned them into a simple smashed cucumber salad.

👩🏼‍🍳The method is simple: slice and smash the cucumbers, season them lightly with salt and a pinch of sugar, and let them sit briefly in a strainer. This helps draw out excess water and allows the cucumbers to absorb more flavor from the dressing.

🧑‍🍳For this version, I used garlic, ginger, chili flakes, rice vinegar, and sesame oil because that’s what I had on hand.

🦾 For some reason people think you need to eat a steak to get iron, which is odd because a serving of red meat contains 2.7 mg of iron which is equal to 15% of the daily value. You can easily reach the recommended 18 mg of iron per day from plant sources. Here are a few plant based sources:
✅ 1 cup lentil contains 6.7 mg =37% DV
✅ 1 cup beans contains 3.6 mg = 20% DV
✅ 1/2 cup tofu contains 3.4 mg =19% DV
✅ 1 oz. dark chocolate 3.4 mg =19% DV
✅ 1 cup quinoa contains 2.8 mg =16% DV
✅ 3.5 spinach contains 2.7 mg =15% DV
✅ 1 oz. pumpkin seeds 2.5 mg = 14% DV
That’s not even an exhaustive list of sources. Also, please take note that dark chocolate (higher % of cocoa is best) has more iron than red meat. Consumers have been duped by big meat and dairy companies once again.
💡 NOW... this is the reason I really wanted to share information about iron with you. You can SIGNIFICANTLY increase the amount of iron your body absorbs by consuming it with Vitamin C. Conversely you SIGNIFICANTLY decrease the absorption rate by consuming it with coffee or black tea. Now when I say significant I really mean it, we are talking +/- 50% or MORE!!! That’s MAJOR! Just have your coffee/tea 1 hour before or 2 hours after the iron consumption. Have fruit or juice or spinach or anything else that is high in Vitamin C with your iron. It is worth it! .
Iron is essential, meaning we need to consume it, we do not make it. It’s function is to make hemoglobin in red blood cells which carry oxygen throughout the whole body. Can you imagine what happens to any of your tissues without oxygen? It’s not a good situation. 💀 ☠️ So get your iron in to avoid iron deficiency anemia.
PRO TIP: 👩🏼‍🍳 If you cook on a cast iron skillet some of the iron will leach into the meal. (Yet another non animal source.) 🌱 .

🥣 This one bowl meal prep process ensures you have breakfast or snacks for the next few days.

🌈 Start with this base recipe and feel free to add different flavors to keep it interesting.

💥 I included a boost to the mix for increased prebiotic compounds which feed the beneficial bacteria in the gut, thus improving gut health.
