A POSITIVE ABOUT EMPTY NESTING.

You can make whatever recipes you want without a complaining kid! lol. My boys do not like these but its my go to and so DELISH!

šŸ«‘Stuffed PeppersšŸ«‘

šŸ’„IngredientsšŸ’„
āœ”4 bell peppers (color of your choice)
āœ”Ā½ pound 93% lean ground turkey
āœ”1 can fire-roasted tomatoes
āœ”2 garlic cloves, grated
āœ”about 1 cup onions, chopped
āœ”about 1 cup cooked brown rice
āœ”about 1 cup shredded cheese
āœ”1 tbsp each ground cumin, paprika, black pepper, garlic powder, onion powder, italian seasoning
āœ”1 tbsp tabasco (more or less to taste)
āœ”Ā½ tsp salt (optional)

šŸ’„DirectionsšŸ’„
āœ”Cook rice according to package instructions
āœ”In a skillet with a little EVOO, saute onion and garlic until tender. Remove from pan and set aside.
āœ”In same skillet, brown ground turkey
Meanwhile, chop the tops off bell peppers. Heat a large pot of water to boiling.
Boil peppers for 3 minutes and remove. Drain on paper towels
āœ”Open can of tomatoes and separate the tomatoes from the juice/sauce its in- but save the juice and spread it in the bottom of a small pyrex baking dish.
āœ”In a large mixing bowl, combine ground turkey, sauteed onions/garlic, half the cheese, rice, diced tomatoes, tabasco, and seasoning. Mix well.
āœ”Fill each pepper with mixture. Top with remaining cheese and sprinkle paprika on top
āœ”Bake at 325 for 20-25 minutes

I’ve battled an eating disorder for many years. It started from childhood and has reared its ugly face many times in my adult years! The scale was a trigger for me from my competitive gymnastics years. Body fat pinched and scale checks as a kid messed with me. The scale still has a hold and I have to remind myself of the health Im creating and it’s more than instant gratification the comes from the scale validation of moving down. Am I alone with this love to hate relationship with the scale?

Can you say you’ve tracked?

All things I asked myself as we finish out the first month of a brand new year.

Have you already given up what you set out to do this year?

Your mind gives in before your body and what I know is an active body in motion tends to lead the brain in continuing.

Maybe the goals you set were so lofty you couldn’t be consistent with them. Now is the time to consider what you CAN do consistently and work on that this next month!

Have you ever created a Health Vision Statement? I took our clients in our community through this exercise and the goal is to take your ā€œwhyā€ and mix it with your core values so that you can create your goals based on what you truly want out of your health this year! I wrote mine and then revised it again!

ā€œIn 2024, I’m all about trying out tasty healthy recipes, tackling hiking trails with friends, and hitting the gym for some heavy lifting fun. Daily meditation and prayer keeps the stress at bay, and I’m ditching the scale worries to focus on living strong and loving it! šŸ’Ŗā€

I don’t always crush goals. In fact, I taught this Monday and by Friday was crying over the scale. Revisiting my vision statement helps me remember what I truly want, even when LIFE hits.

Seeing the same ā€œperfectā€ body everywhere can really mess with a woman’s head about her own body. Stay with me on this…You know, this idea that there’s only one body type that’s considered hot or fit or strong. It makes women feel like their own bodies aren’t good enough.

Trying to fit into a mold that’s totally unrealistic and doesn’t represent most women is a bad deal. We need to shout out for body diversity. There’s no one-size-fits-all when it comes to bodies, and that’s what makes each person unique. Let’s ditch the pressure to fit into some media-driven idea and celebrate all the different ways bodies can be awesome! Are you with me?
