ME: “Mom, will you make me some chicken soup… please sniff… sniff ….🙏❤️” MY MOM: “OF COURSE!!!” Typical Mexican mother perhaps? She also sent me home with EXTRA chicken broth, papaya, cinnamon tea & a chili relleno!!! I’m SOOOOOO grateful for my sweet lil 87 yo mama!!! I hope I never stop needing her. I also hope I can always give her purpose in life, taking care of her lil chicks when we need her most! 🐣❤️☺️😌 ❤️

I understand the hype with, “Aji Kiji,” now. A grab & go style sushi place with different options & tiers ($$-$$$$-$$$$$ /prices) of fresh & delish sushi. The flavors are refined with subtle hints of smoke and umami. It’s a simple concept, a perfectly packed array of taki, sashimi, temaki, uramaki etc. This place is practically a stones throw away from where I live & while I’m super grateful that I get to be exposed to wonderful cuisine here in SF, this place is probably not so great for my pocket book. 😭 Booooooo!! The box you see was, about $30. Honestly, I could probably eat 2-3 more boxes! They start at $28. Don’t let this detour you from trying this place but wanted you to know the whole picture. Obvi, cost for things is relative!!!

Graffeo is one of North America’s oldest artisan coffee roasters, and has been a mainstay in San Francisco’s North Beach neighborhood since 1935. It remains a family-run company passed down through generations. SO MANY delicious roasters & varieties!! Arabica & Robust coffee beans, Rum & coffee, espresso martinis, coffee soda, corn based milk, everything you can think of and more! Matcha, chai, different varieties of tea, mushroom coffee… This city has so many fun activities to@experience ❤️🤗

The Incline in Manitou Springs is no joke. This will be the 5th time climbing this incredible mountain! 5 years ago, I made a pact with myself & vowed that I would come to Colorado to challenge myself & climb every year. That means I have to keep my fitness up during the year. 5 years later & going strong. Hurray!!! Here is some information about, The Incline. The Manitou Springs Incline, also known as the Manitou Incline or simply the Incline, is a popular hiking trail rising above Manitou Springs, Colorado, near Colorado Springs. The Incline ascends Mount Manitou on the east slope of Rocky Mountain which is itself on the eastern flank of Pikes Peak. Difficulty: Extreme

2,768 Steps 😅😳 Base Elevation: 6,530 ft ⛰️, Summit Elevation: 8,550 ft ⛰️, Average Grade: 😦 is about 45%, with some sections reaching as steep as 68%. The trail gains over 2,000 feet in elevation over a distance of roughly one mile.

SOUND ON!! Animal plant edition! Squirrel sounds can mean many different things. They are communicating an alarm, a warning, or they can be calling out during mating season. They can express emotions like excitement or happiness. They use varied sounds such as high-pitched chirps for excitement, barks or screeches for threats, and chattering or clicking to communicate with other squirrels. These vocalizations, often combined with tail flicking, help them warn of predators and defend their territory. Can you tell what our furry friend is trying to communicate? I see tail flicking! Animals are so incredibly!!! By the way, squirrel mating seasons in Northern California can vary by species, but generally, occur in late winter through spring for ground squirrels and involve two main periods in late winter/early spring and summer for tree squirrels.

Just another lovely day picking NOPALES & TUNAS with my 87 yo mom. I’d do just about anything to make her happy & entertained even getting stuck by the lethal lil thorns that embed themselves into my fingers and arms! 💕🥰 I grew up eating nopales & still enjoy them cooked with scrambled eggs! Yum! A nopal, or prickly pear cactus paddles, is a common food in Mexican cuisine. It’s known for its slightly tart, green-bean-like flavor. It can be crisp & have a slimy texture until cooked. Then it’s not so slimy. It is prepared by removing the spines and then can be boiled, sautéed, or grilled before being used many different dishes. You can make salads, tacos, and my personal favorite, scrambled eggs. Nopales are a good source of calcium, antioxidants, and other nutrients. No wonder my mom loves them. A tuna lives on top of nopales & is the prickly pear cactus fruit (tuna) served with or on top of the edible cactus pads (nopales). The fruit is a sweet, very seedy flesh, while the pads are a savory vegetable with a texture similar to green beans. It also is a dish common in Mexican cuisine where both parts of the prickly pear cactus can be eaten. I’m looking forward to the tuna agua fresca that my mom is currently making! Woo Hoo!! 🌵

Now, the food pictures!! I definitely didn’t capture all the food & treats that were had but here are some!! The first pic is of my sweet mom, Celia 💕 She is so tiny amongst all the colorful offerings at, “Mercado 20 de Noviembre,” in Oaxaca Mexico. ❤️ Mercado Benito Juárez is another vibrant marketplace with vendors selling all sorts of items including, crafts, produce, prepared foods & textiles. The signature dishes are items like mole, tlayudas (think….. HUGE tostada!), tamales, chapulines (grasshoppers)!! tetelas, memelas, Oaxaca cheese, mezcal (pic of MANY varieties I sampled), and chocolate. Honestly, all the aforementioned items are made of a corn base; corn cake, thin crispy corn vessel, corn tortilla, steamed corn dough & all usually spread with different items including, refried beans topped with cheese, avocado, meat, squash blossom & cheese & or salsa. The mole was delicious and there are 7 different kinds!! I tasted them all & ultimately decided I liked the, “mole negro,” the best 😃 Looking forward to more culinary adventures in OAXACA!! Also, on the search for the best coffee there!! HASTA LA PRÓXIMA! 🥰

Reminiscing my recent Mexico trip. 🇲🇽 Feeling very grateful to have experienced an incredible day hiking around the community near a massive petrified waterfall, in Oaxaca at Hierve El Agua! “Hierve el agua,” translates directly from Spanish to English to “the water boils” or “boiling water.” The name speaks to the natural mineral springs that bubble up from the ground, giving the appearance of boiling water, though the water is not actually hot. It’s quite chilly but refreshing, especially after a hike to get there. There are more direct routes with less climbing up a mountain alas, I wanted to get my steps in. On our hike, a PUPPY appeared, then another & last the mom! Luckily, my guide also volunteers at a non-profit, dog shelter where these pups would later be taken & cared for 🙏❤️🐶 On my 2nd hike that followed my refreshing swim in one of the mineral pools, I was humbled to walk through the neighboring communities filled with cactus, corn fields & a plethora of both huge wild agave plants & farmed agave. The agave plant maturity time varies by its species and can range from a few years to several decades!! Some varieties can take up to 30 years or more. Crazy!! Luckily, blue agave matures in about 5-7 years & tequila production can begin. 😮‍💨🤣 This trip was special & I look forward to the next time !!! Hasta la próxima ❤️
