If you are struggling with meal prep, use my KISS method: keep it simple stupid.
This is a dinner that I 💯 improvised. When I was doing meal planning and grocery shopping on Monday I was super rushed, didn’t have much money for food, and knew I would have barely any time to cook this week. I have some major issues with the business that need my immediate intervention and have sent my stress levels through the roof. On Monday I made a simple veggie dip and cut up several veggies we can eat with it. Tonight I got home from work late, mentally spent, and physically exhausted. I didn’t really have a plan for dinner. I wandered around my kitchen and pantry and looked for things I could use. I had ground beef, macaroni, and salsa I had made on Monday. I proceeded to throw things in the pan, and in 10 minutes ended up with a taco mac and cheese that was divine. We had the veggies with it and everyone was happy. Having a simple meal that was delicious and I had invented on the fly was so satisfying. It doesn’t solve all my major problems at work, but it did remind me why I love food. All the things fell apart this week, but family dinner brought it back together. Remember that meals don’t have to be complicated, just balanced.
