​At Monarch ILS, we believe that mastering the kitchen is a major step toward independence.

This week, Claire and Raquel took the lead and prepared a classic Italian dinner!
​From measuring ingredients to practicing oven safety, these ladies crushed their goals and served up a 5-star meal. Check out their go-to meatball recipe below! 👇

​🍝 The Recipe
​Mix: 1 lb ground beef, 1 beaten egg, ¼ cup breadcrumbs, ¼ cup parmesan, ¼ cup chopped onion, 2 tsp garlic, salt, pepper, and parsley.
​Shape: Roll into 1 ½-inch balls.
​Bake: 17–20 minutes at 400°F (flip 'em halfway!).
​Serve: Pair with your favorite noodles and marinara!

This week Rachael whipped up a Low-Carb Tamale Pie, and it is the ultimate soul-warmer for this cold weather! 🥘❄️ It’s got all those bold Mexican flavors but with a cheesy cauliflower topping that’s a total game changer.

​Would you give this a try?

Ingredients
The Base:
17.5 oz Ground Beef (95% lean)
1/2 Onion, diced
1/2 Red Bell Pepper & 1/2 Green Bell Pepper, diced
1 stalk Celery, diced
3/4 cup Canned Tomatoes
2 cloves Garlic, minced
Spices: 1 tsp Cumin, 1 tsp Chili Powder, 1 tsp Dried Oregano, Salt & Pepper
The Topping:
1 small head Cauliflower
1.5 cups Cheddar Cheese (divided)
1.5 tbsp Olive Oil

Quick Instructions
Sauté: Brown the beef with the onion, peppers, and celery until tender. Add 1 clove of garlic and season.
Simmer: Stir in tomatoes and spices. Simmer for 5 mins, then stir in 1/2 cup of cheddar cheese.
Prep Topping: Boil cauliflower until soft. Blend in a food processor with the remaining garlic, olive oil, remaining cheese, salt, and pepper until smooth.
Assemble: Pour the meat mix into an oven-proof dish. Spread the cauliflower mash on top.
Bake: Bake at 400°F (200°C) for 25 minutes until golden and bubbling!

🚂✨ All Aboard the Holiday Fun! ✨🚂

​This weekend, clients, families and staff from had a magical time riding the Santa Cruz Holiday Train! The lights were dazzling, the carols were cheerful, and the smiles were absolutely priceless. It was a wonderful way to celebrate the season.

CRITICAL FOOD SUPPORT: Our Response to SNAP/CalFresh Changes

​Many families in our community have had their federal food benefits (SNAP/CalFresh) reduced or interrupted due to recent rule changes and funding issues.

​The Second Harvest Food Bank is here to help fill that gap. You do not need proof of SNAP loss to receive food.

Muchas familias de nuestra comunidad han visto reducidos o interrumpidos sus beneficios federales de asistencia alimentaria (SNAP/CalFresh) debido a cambios recientes en las normas y problemas de financiación.

El Banco de Alimentos Second Harvest está aquí para ayudar a cubrir esa necesidad. No necesita comprobante de pérdida de SNAP para recibir alimentos.
