Here is another shelf stable meal you can gift for those with food insecurity.
Potato soup - Ingredients: 1 package of instant potatoes (dinner portion, not the box), 4 cans of cubed potatoes (drained and rinsed), 2 cans of evaporated milk, 2 cans of chicken broth, 1 can of cream of chicken soup.. Put all ingredients into a large pot with salt, pepper, onion powder to taste and heat to a simmer. Let it simmer together for 10 minutes and gradually add instant potatoes to thicken to desired consistency. An alternative to can potatoes would be dehydrated potatoes soaked in hot water for 30 minutes prior to adding to soup. Cooking time may be longer. Consider a package biscuit mix or package of crackers to complete the meal.

Spanish rice with chicken is a warm comfort food that can be prepared from shelf stable staples. Ingredients: 2 boxes of Rice-a-Roni Spanish Rice, 2 cans of tomatoes or Rotel tomatoes, 1 or 2 cans of chunk chicken (drained). Cook the rice per directions on the box, using either the tomatoes or Rotel tomatoes. Add drained chicken after cooked. A can of black beans and/or drained corn could be added to help complete the meal, along with a package of flour or corn tortillas. If you do not know who to gift that has food insecurities, consider taking donations to Caring Community Friends on Burnham Street in Sapulpa or choosing one the blessing boxes around town.

Another shelf stable meal you can gift a family in need is Chicken Alfredo - Ingredients: fettuccini or spaghetti noodles, 2 jars of alfredo sauce, a can of chunk chicken (drained), shelf stable grated parmesan cheese. Directions - cook pasta per directions, drain but save some pasta water, add alfredo sauce and chicken, heat until warmed through and add salt, pepper and garlic powder to taste. Serve with the parmesan cheese. You could add a couple cans of green beans or other vegetables to complete the meal.

Day 3 of posts. Here is another shelf stable blessing meal you can give to someone in need.
Chicken and Noodles - Ingredients 1 package of egg noodles, 2 cans of cream of chicken soup, 1 can of chicken broth, 1-2 cups of water to desired consistency, 1 can of chunk chicken (drained). Directions - cook noodles per package instructions and drain. Add all other ingredients and heat until bubbling. Add salt and pepper or a pat of butter to taste.

Turn your clocks back an hour! Daylight savings time ends tonight!

Another shelf stable meal idea today that can be used to help a family with food insecurity. 7 can taco soup. Ingredients: 2 cans of beans of your choice, 1 can of whole kernel corn or hominy, 1 can of dices tomatoes, 1 can of Rotel tomatoes, 2 cans of chicken broth, 1 packet of taco seasoning and 1 packet or ranch dressing mix. Put all in a pot, bring to a boil, then reduce heat and simmer for 20 - 25 minutes. Add salt and pepper to taste. Add more taco seasoning or a little cayenne pepper for heat. Consider tortilla chips, a bag of rice or minute rice to complete the meal.

Today is the start of November. We all think about the Thanksgiving holiday just around the corner. But, this year, we are thinking also about those with food insecurity. We ran across an idea online for baskets with shelf stable foods that can make a family meal. We are going share some of them with you. Here is the first one.
White chicken chili - include the following: 2 cans great northern beans, 1 can whole kernel corn, 1 can green enchilada sauce, 1 small can of mild green chilis, 1 can cream of chicken soup, 1 can of chunk chicken (drained), 1 -2 chicken bullion cubes. Directions - combine all ingredients in a pot with 1 -2 cups of water for desired consistency. Bring to a boil and then reduce heat to a simmer for 20 - 25 minutes. Optional additions, chopped and cooked onion or onion powder, garlic or garlic powder, salt and pepper to taste, chili powder, or other seasonings of your choice. Consider a cornbread mix packet or a box of crackers to help complete the meal for the family you want to bless.

Green Hill Funeral Home in Sapulpa opened in 1995 to combine a full service funeral home with a cemetery for one convenient location, with service beyond expectations, and Green Hill Funeral Home in Owasso opened in 2012 with the aim of providing the Owasso area with the same quality service we have been providing in Sapulpa . Author Robert Anderson reminds us, “Death ends a life, but not a relationship.” Our funeral homes are staffed with experienced professionals who are committed to taking care of every detail. We listen carefully to each family and offer a wide variety of services with their own traditions and financial means in mind.

Tom Dugan has been the Managing Funeral Director for 20 years in Sapulpa and in Owasso, since it opened in 2012. He and his wife Michelle purchased both locations in December 2016. Joe Nichols, with more than 45 years of experience as a Funeral Director, also helps serve families in both locations.
