Asian Turkey and Green Bean Saute
Prep Time: 20 min
Serves: 4
• 1 (12-oz) bag fresh trimmed green beans
• 3/4 bunch green onions
• 1 tablespoon sesame oil
• 1 lb ground turkey breast
• 3 tablespoons chili sauce with garlic
• 3 tablespoons hoisin sauce
• 1 teaspoon lightly dried ginger
• 17 oz riced Cauliflower
• 1 tablespoon reduced-sodium soy sauce
• 1 tablespoon rice vinegar
Preparation Steps
1. Microwave green beans on HIGH for 3 minutes.
2. Preheat large sauté pan on medium-high 2–3 minutes. Slice green onions (1 cup). Add oil and green onions to pan; cook and stir 1 minute. Add turkey; brown 4–5 minutes, stirring to crumble meat, and until no pink remains.
3. Reduce heat on meat to low. Stir in chili sauce, hoisin, ginger, and green beans; simmer 2–3 minutes or until sauce thickens and green beans are tender.
4. Squeeze pouches to separate rice. Tear each two inches to vent. Microwave on HIGH for 2 1/2 minutes. Let stand in microwave 2 minutes before removing.
5. Stir soy sauce and vinegar into turkey and green beans mixture; cook 1 minute. Serve turkey and green beans over rice.

I'm Barbara Ingram-Rice. I've been a life long student of health and have also practiced as an occupational therapist since 1983 and a massage therapist since 1990. My health journey has taken some detours at times. But, I try to learn the lesson in the detour. Currently I'm working on self sabotage.
