Oatmeal peanut butter bars!

Heat 1 cup peanut butter and 1/3 cup honey over medium heat until well incorporated. Remove from heat. Add 2 cups of oats and a pinch of salt. Mix well. Press into a parchment paper lined 9x9 pan. Melt 1 cup chocolate of your choice in the microwave. Pour over oat bars and refrigerate until set.

I used plain chocolate bars from Austin's Halloween candy for the chocolate top!

I don't "meal prep" per say but I do plan my meals out for the week.

I try to make a batch breakfast whether it's baked oatmeal, waffles or sheet pan pancakes (like the ones pictured). I used a chocolate chip pancake mix, a can of pumpkin puree and water! Super moist and yummy!
