Happy Mood Morning

Recipe

4-5 carrots
3 fennel stalks, leaves and flowers
1/2 cucumber
1/2 apple (green is lower in sugar)
Handful spinach
1-inch of ginger root

3 fennel stalks; include leaves and flowers
3 carrots, scrubbed well, tops removed, ends trimmed
2 stalks celery
1/2 pear
1/2 inch chunk ginger root, scrubbed or peeled if old

Homemade dehydrated crackers with carrot pulp

2 cups sprouted, buckwheat groats
1 cup carrot pulp
3/4 ground flaxseeds
1/2 cup extra-virgin olive oil
1 tablespoon Italian herbs
2 cloves garlic, chopped

Mix all ingredients together in a food processor. Start with the garlic and buckwheat groats, which you will soak overnight first. Next add the remaining ingredients. Process until completely smooth. Scoop dough, which should be the consistency of pancake batter, onto dehydrator sheets, and spread evenly across the sheet. Distribute the dough to about 1/8 to 1/4 inch thick, Score the dough in squares. Dehydrate at 105 to 118Β°F for 7 to 10 hours and then flip the crackers. Dry for another 7 to 10 hours or until completely dry and crisp. If the cracker is even slightly moist, it won’t be good. Enjoy!
