Beef tallow — once a kitchen staple for savory roasts and flaky pastries — is making a comeback as a wellness trend.

So what is it really? Beef tallow is the rendered fat from cows, often used for frying or roasting. It’s rich in saturated fat, but also contains stearic acid, a type of fat that may not raise cholesterol as others do. Some people even use beef tallow in skincare.

While it may offer some benefits, Mayo Clinic dietitians recommend using tallow sparingly, especially if you’re concerned about your heart health.

Mayo Clinic researchers are looking for individuals ages 18-75, with moderate to severe Crohn’s Disease (CD), to participate in a research study. The purpose of this study is to evaluate the safety and effectiveness of using multiple medicines (Risankizumab, Trosunilimab, and Lutikizumab) compared to a single medicine in participants with moderate to severe CD. If selected to participate in this study, you will be randomly assigned into 1 of 5 different groups. Each group will receive a different drug or group of drugs. Study participation involves laboratory tests (blood, urine, and stool), endoscopy, chest x-ray (if needed), vitals, questionnaires, and physical exams and will last up to 7 months with an optional long-term extension study that will continue for an additional 72 weeks. In Lusaka, Zambia, where clinical improvisation is often essential, Mayo Clinic anesthesiologist Kashmira Chawla, M.D., led a group of senior residents from Mayo Clinic School of Graduate Medical Education (MCSGME) on a collaborative expedition to improve airway management and perioperative care.

The rotation was designed to be a two-way exchange: Mayo residents taught bedside techniques and led simulation training sessions using high-fidelity mannequin simulators. Zambian clinicians shared their expertise in adapting care to local conditions.
