1 1/2 cups plain nonfat Greek yogurt
1/2 cup whipped cream cheese
2 tsp sugar free cheesecake jello mix
1 scoop of vanilla protein powder

For the crust:
10 Biscoff cookies
1 tbsp butter, melted

For the topping:
⅓ cup Biscoff
1/2 biscoff cookie (optional)

Instructions:
1. Mix together the Greek yogurt, whipped cream cheese, cheesecake Jello mix, and vanilla protein powder until smooth. Set aside.
2. Add the Biscoff cookies to a zip-top bag and crush into fine crumbs. Transfer to a small bowl, add the melted butter, and mix until the crumbs are evenly coated and slightly clumpy.
3. Evenly divide the cookie mixture between each cup. Press down firmly with the back of a spoon or your fingers to form an even crust layer.
4. Spoon the cheesecake mixture evenly into each cup and smooth out the tops.
5. Add the Biscoff spread to a small bowl and microwave for 10-15 seconds until melted and pourable.
6. Drizzle an even layer of the melted Biscoff over each cup. This will create the hardened top layer once chilled, so try to coat the surface evenly.
7. Sprinkle with a few extra cookie crumbs, then refrigerate for at least 1 hour.
8. Once the Biscoff has set into a firm shell, they’re ready to enjoy.

Store covered in the fridge for up to 4-5 days 🫶🏻

dare I say my favorite soup ever??? 👩🏼‍🍳recipe 👇🏻

marry me chicken tortellini soup 🥣

what you’ll need:

½ small yellow onion, finely diced
4 cloves garlic, minced
1 tbsp avocado oil
½ cup sun-dried tomatoes
2 cups fresh spinach
1 tbsp tomato paste
1, 14 oz can crushed tomatoes
4 cups chicken stock
1 tsp Italian seasoning
½ tsp red pepper flakes
1 tsp salt
1/2 tsp pepper
1 cup heavy cream
½ cup grated Parmesan cheese
3 cups cooked chicken (rotisserie works great)
1, 10 oz package cheese tortellini
Fresh basil, for serving

Instructions:
1. Heat 1 tbsp of avocado oil in a large pot over medium heat. Add the onion and cook for 3-4 minutes until softened. Stir in the garlic and sun-dried tomatoes and cook for another minute until fragrant.
2. Add the tomato paste and cook it down for 1-2 minutes to deepen the flavor. Then pour in the crushed tomatoes, chicken stock, Italian seasoning, red pepper flakes, salt, and pepper.
3. Carefully transfer the mixture to a blender (or use an immersion blender right in the pot) and blend until smooth and creamy.
4. Pour the blended soup back into the pot over medium-low heat. Stir in the heavy cream and parmesan cheese until melted and silky.
5. Bring the soup to a gentle boil, then add the tortellini and cooked chicken. Simmer for 6-8 minutes, or until the tortellini is tender and cooked through.
6. Stir in the spinach and let it wilt for 1-2 minutes. Taste and adjust seasoning as needed.
7. Ladle into bowls and top with fresh basil, an extra drizzle of olive oil, more parmesan, and a sprinkle of red pepper flakes.

If you haven’t added a fiber supplement to your routine yet, I highly recommend it. I love because it’s totally tasteless and dissolves right into coffee, tea, smoothies, literally whatever you’re already drinking. Easy, seamless, and your gut will thank you 🫶🏻

this makes your house smell AMAZING! 🍎🥧✨recipe below 👇🏻

maple cinnamon baked apples

What you’ll need:

2-3 large apples sliced
3 tbsp maple syrup
2 tbsp butter
Juice of ½ lemon
2 tbsp corn starch
2 tbsp water
1 tsp cinnamon
flaky sea salt
whipped cream or cool whip

Instructions:

1. Preheat your oven to 350°F.
2. Slice up 2–3 apples and toss them into an 8x8 baking dish.
3. In a small bowl, whisk together the maple syrup, melted butter, lemon juice, cornstarch, water, and cinnamon until smooth. Pour the mix over the apples and give everything a good stir so they’re evenly coated.
4. Pop the dish in the oven and bake for 25-30 minutes, stirring every 10 minutes, until the apples are soft, golden, and the sauce has thickened.
5. Sprinkle a little flaky sea salt on top (trust me, it makes the flavors pop!) and serve warm with a big dollop of whipped cream or cool whip.

*Store in an airtight container in the fridge for up to a week.
