I had some organic beets from Springdale Farm and made up a dozen of these beetburgers.
50% beet, 25% quinoa, 25% Basmati Rice, egg, flour.
Add ,a basil pesto Aioli, red onion, arugula, avocado, and cheddar cheese. Delicious!!

So I am back in the kitchen again. It is a farm to table concept restaurant whose menu changes weekly depending on what is available from local sources. I have known Mike and Shannon at Holla Restaurant in Manitowoc for 5 years, they serve local fare with a global flair.
Well worth the drive north.
