Canned water is only considered crazy until a natural disaster hits and bottled water disappears from the shelves. Start by filling clean jars with water, leaving 1/2 inch of headspace. Wipe the rims with cream of tartar, then place the lids and rings on, tightening only fingertip tight. Do not crank them down.
Place the jars in a water bath canner. If the water is cold, the jars and canner should also be cold. If the water is hot, the jars and canner should be hot as well. Mixing temperatures can cause jars to break. Make sure there is at least 1 to 2 inches of water covering the jars. To help prevent cloudy jars, add a small amount of cream of tartar to the canner.
Put the lid on the canner and turn the heat to high. Once it reaches a rolling boil, start a 20 minute timer. When time is up, carefully remove the jars and place them on a towel. Let them sit undisturbed for 24 hours. After 24 hours, remove the rings and check the seals. If sealed properly, label them. You just canned water.
