Healthy Girl Dinner Spaghetti Squash
🥣 Ingredients
• 1 medium spaghetti squash (about 4 cups cooked)
• ½ lb (8 oz) lean ground turkey or beef (93% lean)
• 1 cup tomato sauce (no added sugar)
• 1 cup fresh spinach
• ½ cup low-fat cottage cheese
• 2 cups broccoli florets
• 2 Tbsp grated aged Parmesan cheese
• 1 tsp olive oil (for sautéing)
🥘 Recipe
Cut spaghetti squash in half. Lay flat on pan. Bake at 400° for 1 hour. I add a little water to the pain to help create steam.
Brown your meat and set aside.
In your tomato sauce, sauté spinach, then add cottage cheese and meat.
Scoop the seeds out of the squash and use a fork to break up the squash.
Top the squash with meat sauce.
Steam broccoli for 2 minutes in microwave.
Add broccoli to the top of your spaghetti squash and sprinkle aged parmigiana on top.
You can use the squash as your bowl :)
