Weather in the midwest is unpredictable this time of year. Now we’re back to winter and need to pull out some soup recipes again! Try this easy, full of flavor Coconut Lentil Tomato Soup! 🍅🥣
INGREDIENTS
🥣2 teaspoons coconut oil
🥣2 large garlic cloves, minced
🥣 1 onion, diced
🥣 3 celery stalks, diced
🥣1 teaspoon ground cumin
🥣 ½ teaspoon ground ginger
🥣 2 teaspoons chili powder
🥣 14 oz can organic diced tomatoes
🥣 5–6 cups organic vegetable or chicken broth
🥣 1 cup red lentils, rinsed and drained
🥣 2 handfuls of chopped organic spinach
🥣 ½-1 cup of coconut milk (more if desired)
🥣 sea salt and pepper, to taste
INSTRUCTIONS
1️⃣ In a large pot, sauté the onion and garlic in oil for about 5–6 minutes over medium heat.
2️⃣ Add in the celery and sauté for a few minutes more. Stir in the cumin, ginger, and chili powder.
3️⃣ Stir in the can of tomatoes (including the juice), broth, and lentils. Bring to a boil, reduce heat, and then simmer, uncovered, for about 20–25 minutes, until lentils are tender and fluffy.
4️⃣ Add coconut milk, stir in spinach, and remove from heat
5️⃣ Season to taste (adding more spices, if you wish)
