Recipe Alert‼️ Thought I’d create a new recipe to share with you all!
RAW’s Quick Egg Roll Bowl was given a HUGE thumbs up by the most honest food critics, living in my house! 😉 Believe me, they tell me when my food sucks!
BTW, this meal tastes even better as leftovers!! 🙌🏻
(Definitely look for it on a future grab n go menu!!)
💚RAW’s Quick Egg Roll Bowl 💚
Prep time: 20 minutes
Cook time: 25 minutes
Servings: 4-6
Calories: 410
Ingredients
2 tbsp olive oil
1 lb ground chicken or pork
4 sliced scallions
1 red bell pepper, diced
1 lg carrot, slivered
1 C red cabbage, sliced
3 garlic cloves, minced
1 tbsp fresh ginger, minced
1-14oz cole slaw
3 lg eggs, whisked
3 tbsp hoisin sauce
3 tbsp soy sauce
1 ½ tsp toasted sesame oil
salt
ground pepper
sesame seeds or peanuts for garnish
butter lettuce, chopped
Brown rice or lo mein noodles, cooked
Directions
Heat 1 tbsp of oil in medium heat. Cook the ground chicken/pork while seasoning it with salt and pepper. Breaking it up with your cooking utensil as you go along. Transfer to a plate and set aside.
Cook the cole slaw, red pepper, carrots, red cabbage, garlic and ginger in the remaining tbsp of olive oil, until slightly wilted. Push the mixture to the side of the pan and pour the whisked eggs to the empty side of the pan and scramble them.
Combine the eggs to the cole slaw mixture, add the cooked meat, hoisin, soy sauce, sesame oil to the pan and toss until evenly coated. Taste and add a bit more hoisin or soy sauce, if needed.
Serve warm over butter lettuce, rice or lo mein noodles (if desired), sprinkle with sesame seeds. ENJOY!!
