Burdock root. I needed to find prebiotic fiber(inulin) that wasn't made in a lab, for yogurt making, and found this incredible medicine/superfood. Apparently the Japanese have been serving this as appetizers, fermenting it, or for flavoring stocks, sauces, and soups for more than a millenia. Prebiotic fibers like this allegedly enhance probiotics, whether in the gut or in the yogurt being made.
