This is by far the most used piece of equipment (outside my coffee maker and dishwasher) in my kitchen. Do you own a food processor!?

I'm all about keeping it simple and this machine is like 10 in 1. Here's a list of 10 things I do with my favorite kitchen tool.

1: make hummus, pesto, aioli, dressings - anything saucy
2: grind fresh dried herbs
3: purée fruit for preserves
4: make banana ice cream!!
5: grind nuts for a crumble, grain free crust or baked goods
6: grind nuts + dried fruit to make homemade bars/balls
7: shred carrots, cabbage, etc for salads or fermentation
8: gazpacho
9: grind meats like salmon, chicken or beef liver 😜
10: marinades (like my infamous jerk chicken sauce that may or may not become public domain)

What do you do when someone in your house isn't very "on-board" with eating healthy? Your meat-&-potatoes loving boyfriend, husband, girlfriend, wife, child?? COMPROMISE
This is my compromise when my carb-addicted husband wants pasta. I sauté a boat-load of vegetables and add a hint of pasta. He still gets pasta, I still get veg. Everybody is happy 👍🏼☺️
Pictured is a sauté of 1 red onion, 1 zucchini, 1 yellow squash, 2 crowns of broccoli, a few handfuls of arugula, 1 cup organic whole-wheat pasta, 3 andouille chicken sausages, a couple heaping spoonfuls of homemade nettle pesto and a handful of shredded Dubliner 🧀. Yum!

Salmon 🐟- high in omega-3's to keep our brains and heart happy and healthy and to fight inflammation in the body. It's one of our favorite dinners because it's so easy! The morels and other colorful vegetables on the plate also boost anti-inflammatory and immune modulating proteins.
To bake salmon: preheat oven to 350F. Lay salmon fillet(s) on cookie sheet over parchment paper. Sprinkle with salt, pepper, herbs of choice. If you are using fresh herbs, add them when the salmon is done (or they get dried and burnt). Cover with lemon slices or lemon juice and bake 10 min for every inch thickness of fish. Fish is done when it flakes easily when pressed.

Balance is key folks!! Although I am a fan of , it is essential to balance it out with and to shunt that glucose spike. This was my this morning:

-Fresh pressed grapefruit, tangerine, celery, beet, ginger, lime juice
-2 farm-fresh hard boiled eggs
-1 cup bulletproof coffee (coconut oil + grass fed butter)
-2 Brazil nuts

The protein and fats from the hard boiled eggs, coffee and nuts slow down the digestion of the simple carbs in the juice and has a stabilizing impact on your blood sugar.

Brazil nuts are super high in - a potent antioxidant and trace mineral that has practically vanished from our soil - so I have 2 every morning 🌅

And, just this morning I was reading an article about choline in our diets. 90% of Americans fall short! Choline is essential for brain and neurological function and helps our liver metabolize fats. Eggs are a great source of and we no longer worry about - so eat away!

This week I'm showcasing the under-rated immersion stick or as some call it, a blending wand. I drug my feet for years putting off the $30 investment and I can't tell you how much I regret not buying it sooner. Here's the top 5 things I like to do with my wand
:
1) Blend coffee drinks. I purchased a stainless-steel milkshake container to pour hot beverages into to blend safely. My favorite is 1 Tbsp grass fed butter and 1 Tbsp coconut oil blended with my morning coffee (as pictured)
2) Pureeing soups - no need to transfer to a blender and dirty more dishes!
3) Smoothies in a cup - again, no blender required, I can just blend what I need in the same cup I'm going to drink out of.
4) Frothy hot chocolate
5) Whisk attachment replaces the need for handheld beaters. Great for whipping eggs or cream

Another great meal prep staple: cooked vegetables. Most people don't realize that although yes, variety is key, you can eat the same thing in various ways all week as long as you switch it up week to week and season to season. Think of it as repurposing vegetables to make your meals easier and healthier. Sautéed fajita vegetables are great by themselves, on sandwiches or in wraps, in salads, on eggs or under eggs, mixed with beans or cooked over corn chips for a healthier version of nachos. There's so many ways to spin it!

Yesterday was meal-prep day and I almost always set aside a half dozen hard boiled eggs for the week. In a perfect world, I'd love to get up slow and cook them every morning 🍳 but in reality, sometimes breaky is a couple hard boiled eggs and a piece of fruit 🍐 maybe a handful of nuts. Here's how to make the perfect hard boiled egg:

-Pasture-raised, farm-fresh eggs or organic from the store
-Water

In a large saucepan, cover eggs in cold water until completely submerged. Cover and heat on high until water starts to boil. Leaving the pan on the burner, turn off heat and set a timer for 12 minutes. When the timer goes off, submerge in a bowl of ice water to quickly cool and stop cooking. Refrigerator or enjoy 🍴
