Harvested early and fresh from the vine, green garbanzo beans (same thing as a chickpea) are the immature or baby version of the traditional blonde garbanzo you are used to seeing. By picking them early in the plants live state, we capture the beans while they are still in their fresh green state, meaning the natural sugars (good carbs) have not yet dried and converted to starch (bad carbs). This method of harvest means the bean is picked at its peak of nutrition and flavor. After harvest they are rushed to our processor to be further washed, blanched, and flash frozen to guarantee quality within minutes from the field.
