Christmas Roasted Vegetable Medley with Maple-Feta Crumble

Ingredients:

2 cups (300 g) carrots, peeled and sliced into 1 in (2.5 cm) chunks

2 cups (300 g) parsnips, peeled and sliced

2 cups (350 g) Brussels sprouts, halved

2 cups (350 g) butternut squash, peeled and cubed

2 tbsp (30 ml) olive oil

2 tbsp (30 ml) pure maple syrup

1 tsp (5 g) sea salt

1/2 tsp (2–3 g) black pepper

1/2 tsp (2–3 g) garlic powder

1/2 tsp (2–3 g) dried thyme or rosemary

Maple-Feta Crumble:

1/2 cup (75 g) crumbled feta cheese

1 tbsp (15 ml) maple syrup

1 tbsp (10 g) finely chopped pecans or walnuts

Optional garnish: fresh parsley

Directions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss carrots, parsnips, Brussels sprouts, and butternut squash with olive oil, maple syrup, salt, pepper, garlic powder, and thyme/rosemary until evenly coated.

Spread vegetables in a single layer on the tray. Roast for 25–32 minutes, stirring once halfway, until golden and tender.

Meanwhile, prepare the maple-feta crumble: gently toss feta with maple syrup and chopped nuts.

Transfer roasted vegetables to a serving platter and sprinkle the maple-feta mixture over the top.

Garnish with fresh parsley if desired and serve warm.

Prep Time: 10 minutes
Cooking Time: 30 minutes
Total Time: 40 minutes

Change isn’t always cute.
Sometimes it’s messy, emotional, and layered right on top of real life.

This past season stretched me in ways I didn’t exactly ask for—new location, new brand name, upgraded services… all while navigating personal life stuff that required a little extra grace (and deep breaths).

And yet…
I’m so glad I didn’t play it safe.
Moving into a new space.
Elevating the experience.
Choosing a name that finally feels like me.

Kundalini is often called the yoga of awareness—but at its heart, it’s a practical way to wake your body up without wearing it out.

I started learning Kundalini because, like so many of you, I work . I’m busy and tired. We are beautifully overextended humans. People who don’t need more to do… they need something that actually works.

Kundalini uses simple, repetitive movements, breath, and focus to move energy, clear mental fog, and reset your nervous system—fast. No flexibility required. No outfit change.

As I deepen my training and begin teaching it, I’m falling in love with how accessible it is. These movements are quick. They’re gentle. And somehow, they leave you feeling more awake, more steady, and more like yourself again.

This isn’t about pushing harder.
It’s about giving your body a spark—without draining the battery.

These are all sooo good and juicy for the low back, quads , hamstrings and glutes.

If you have low back pain or discomfort
I HIGHLY recommend trying these. The kicker: Consistency is key. Try to do 1-2 of these each day .

Need help remembering? Try habit stacking. Pair stretching with something you already do, such as after you brush your teeth or while coffee is brewing .
