Recipe 6 in my 10-Minute Lunches with 30+ Grams of Protein is a BLT Salad! 🥓🥬🍅
I’ve been making salads with a layer of cottage cheese on the bottom for a couple of years now—let me tell you, it’s sooooo good. It provides the bulk of the protein for this salad, a great contrasting texture, and makes the whole thing so easy!
Here’s the recipe:
1 cup cottage cheese
1 ounce lettuce of choice, chopped
6 ounces grape tomatoes, halved
Salt and pepper
About 1 tablespoon extra-virgin olive oil
About 1 tablespoon balsamic glaze (vinegar will work if you don’t keep glaze on hand)
2 slices of bacon, cooked and chopped
1. Spread the cottage cheese in a thin layer on a plate.
2. Add the lettuce and tomatoes and sprinkle with salt and pepper.
3. Add a drizzle of extra-virgin olive oil and balsamic glaze and top with the bacon.
