Recipe 6 in my 10-Minute Lunches with 30+ Grams of Protein is a BLT Salad! 🥓🥬🍅

I’ve been making salads with a layer of cottage cheese on the bottom for a couple of years now—let me tell you, it’s sooooo good. It provides the bulk of the protein for this salad, a great contrasting texture, and makes the whole thing so easy!

Here’s the recipe:

1 cup cottage cheese
1 ounce lettuce of choice, chopped
6 ounces grape tomatoes, halved
Salt and pepper
About 1 tablespoon extra-virgin olive oil
About 1 tablespoon balsamic glaze (vinegar will work if you don’t keep glaze on hand)
2 slices of bacon, cooked and chopped

1. Spread the cottage cheese in a thin layer on a plate.
2. Add the lettuce and tomatoes and sprinkle with salt and pepper.
3. Add a drizzle of extra-virgin olive oil and balsamic glaze and top with the bacon.

✨April health goals are here✨3 simple goals again this month. A very big part of me wanted to have one goal this month and it would read something like this:

FIGURE OUT MY FREAKING SLEEP.

Yep, still working on it (See March heath goals for reference) Two of my goals this month are related to still chasing after the elusive consistent restorative sleep. I will figure it out! Stay tuned.

Let’s look at each goal:

1️⃣Meditate Daily—this is REALLY hard for me. I constantly have 55 tabs open in my brain and turning it off is a challenge. But I do think a meditation habit will lower my overall stress levels and that may be a 🔑 to better sleep.

2️⃣Get outside for 30 minutes (at least) every day—Everything is better when I spent time outside. My mood, my stress levels, AND my sleep. Getting intentional about it this month.

3️⃣Eat more vegetables everyday—generally speaking, I eat a lot of vegetables. BUT I do notice that when I am so focused on getting enough protein, sometimes vegetables become an afterthought. Those phytonutrients deserve a starring role in my diet, so I’m making it a goal this month so it is something I don’t forget.
