✨ Lemon Garlic Chicken Bowl ✨
Ingredients (Serves 4):
• 1½ lbs boneless, skinless chicken breast
• 1 cup dry quinoa (or rice)
• 2 cups broccoli florets
• 1½ cups sliced bell peppers
• 2 Tbsp olive oil
• 3 cloves garlic, minced
• 3 Tbsp fresh lemon juice
• 1 tsp salt
• ½ tsp black pepper
• 1 tsp Italian seasoning
Directions:
1️⃣ Mix olive oil, garlic, lemon juice, salt, pepper, and seasoning.
2️⃣ Coat chicken and grill or bake at 375°F for 20–25 minutes, until cooked through.
3️⃣ Cook quinoa according to package directions.
4️⃣ Steam broccoli and roast bell peppers at 400°F for 15–20 minutes.
5️⃣ Assemble bowls and enjoy!
