Cozy Chicken & Rice Soup for a Rainy, Cloudy Day ☔🍲

Nothing says comfort like a warm bowl of chicken and rice soup—simple, nourishing, and made with love. Perfect for chilly, rainy days and gentle on the body.

🥣 Easy Comfort Recipe

Ingredients
• 1 lb boneless chicken (breast or thighs)
• 1 cup white or brown rice
• 8 cups low-sodium chicken broth
• 2 carrots, sliced
• 2 celery stalks, sliced
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 tsp salt (to taste)
• ½ tsp black pepper
• 1 tsp dried thyme or parsley
• Optional: bay leaf, fresh lemon squeeze

Directions
1. In a large pot, bring broth to a gentle boil.
2. Add chicken, veggies, rice, and seasonings.
3. Reduce heat; simmer 25–30 minutes (until chicken and rice are tender).
4. Shred chicken, return to pot, adjust seasoning, and serve warm.

Our staff is available to make your life easier. We want you to have the best life possible with the limits you or your family member have been given. Studies have shown that being cared for in your own home as apposed to in a nursing facility you will heal faster and feel better. Stress Free Home Care is here to help you live a joyful and productive life in the comfort of your own home. Call today for a free consultation by one of our community care coordinators. Once you have decided to start services, one of our registered nurses will perform a medical assessment and develop the care plan for your loved one. Our caregivers follow the care plan to provide assistance for your family member.

Stress Free Home Care was started by Candi Wheat Lethcoe and Kim Jones on October 5, 2010! The very first clients were the late Ron & Katherine Harper. After several years they purchased a wheelchair transportation van to utilize for their clients and individuals in the community.

Stress Free Home Care is very involved in the community with many volunteer efforts and financial contributions. They continue to volunteer for the Gaston County Meals on Wheels program once a month, since 2013. Zach’s Place is an organization in Stanley that helps feed children at a local church and the office staff volunteer and make financial contributions to help with purchasing the food for the children. The Shelter of Gaston County has also benefited from meals prepared by Stress Free Home Care and delivered to The Shelter for the women and children. Stress Free Home Care has given money to East Gaston High School’s baseball team and Stanley All Star’s traveling to the Dixie Youth World Series in August 2017. Many other volunteer efforts and financial contributions have been made and will continue, as Candi lives by the words of the late Ron Harper, “You have to give back!”
