This simple vegetable soup is warm, nourishing, and easy to enjoy, making it a comforting option for memory care. Soft textures and familiar flavors help support hydration and overall wellness.

Ingredients
🥕 diced carrots
🥔 diced potatoes
🧅 chopped onion
🥬 chopped spinach or zucchini
🍅 canned diced tomatoes
🫗 low sodium vegetable broth
🌿 olive oil
🧂 pinch of salt and pepper

Instructions
1️⃣ Heat olive oil in a large pot and gently sauté the onion until soft
2️⃣ Add carrots and potatoes, stirring for a few minutes
3️⃣ Pour in diced tomatoes and vegetable broth
