Basil is my favorite

Thanks to mom for growing this beautiful basil so I was able to turn it into pesto.

I always make a large batch and freeze some to use at a later time.

We are officially Floridians!

This was the best family pic we could get, but those are some cute 🐖 tushies!

This was definitely a process and a stressful last few months, but totally worth it! Feeling very blessed for everything aligning and having this opportunity.

Change can be scary and a challenge, but staying stagnant is worst.
If you have dreams/goals, create a plan and go get them!

Feeling alive again in this warm weather and looking forward to growing lots of fruit & veggies along with adding more animals to our family!

Growing food for my family brings me so much joy. To watch a tiny seed flourish into a plant and then the flowers become food.

Spending time in the garden & kitchen are my happy places.

My goal is to one day grow and preserve enough food for my family so we are more self-sufficient.

Many people have told me that I am crazy, it's a lot of work, why would you want to do that?

I just ignore them and proceed with my dream. 😉

Benefits of growing your own food:
1. Eat in season
2. Added vitamins & nutrients
3. Organic
4. Cost effective
5. Learning experience
6. Taste better!
7. Produce is picked when ripe
8. Self-sufficient
9. Ferment & Canning
10. Know the source of your food

I am making pickles with my cucumbers. They will ferment on counter for 1-2 weeks then go in the refrigerator. Used new cookbook for recipe!

LEMON BALM
Has anyone heard of lemon balm?

To be honest, I wasn't thrilled when lemon balm started spreading throughout my garden, but realized it's a blessing. One small plant has turned into an abundance of food for friends and family.

Lemon balm has many healing properties, but also tastes delicious.

I made lemon balm pesto for the first time and will be making many more batches.

What do you use your lemon balm for?

My Journey

My interest in health and wellness began over 5 years ago when I watched the documentary, Forks over Knives. Up until that moment, I didn’t think about what I was putting into my body and what impact it could have on inflammation, mental clarity and the amount of food I was consuming. I thought food was food, but quickly realized how wrong I was. These past 5 years have been focused on nurturing my body and improving my overall health since I was diagnosed with Hashimoto’s Hypothyroidism over 10 years ago. Learning what to eat and how to nurture my body helped me in so many ways that I wanted to share my knowledge and help others, so I became a Health Coach over a year ago. My certification is from the Institute of Integrative Nutrition. I now work with clients to help them achieve their health & wellness goals. I specialize in meal prep and nutrition by offering cooking classes, preparing food at clients homes and teaching others the importance of food.
