A great dish from Laura Hunt (customer)
Name of the dish: VERY EASY Spicy Thai Noodle Soup
Ingredients: 4 cups vegetable broth (low sodium)
1 cup chicken bone broth
1 package skinny pasta (I prefer noodle shape for this recipe but will use what I have!)
1/2 cup salsa
2 stalks celery (diced)
1 cup mushrooms
2 radishes (sliced)
1 red bell pepper
2 cloves garlic (minced)
1 green onion (sliced)
1/4 cup cilantro (minced)
1 lime (juiced)
1 carrot (diced)
1 serrano pepper (sliced, optional)
1/2 tablespoon ginger (grated)
1/2 cup light coconut milk
1 tablespoon rice wine vinegar
1 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon onion powder
1 pinch salt
Optional: add shredded or diced cooked chicken!
Instructions: I put all of the above in a pot all at once and simmer, taste and add seasoning as needed. You can also add shrimp or any other veggies you like!
