365 days ago I started (faithfully) Intermittent Fasting, and it has been such a blessing for my mind, body and soul.

I swore after fixing my gut health several years back that I would never be forced to “get healthy” again. Little did I know what the end of menopause would do to me!! (Definitely still more than a little salty about the HRT lies that were debunked once I was already at “the pause”).

I.F. to the rescue!! It’s about sooooo much more than the 45 pounds off my body, it’s about restoration and healing! I’ve got a LOT of life to live yet; and a LOT of people to live it for!

I haven’t used any pharmaceuticals beyond a little estrogen and progesterone (hallelujah for HRT); just a full on commitment to ME, plus giving thanks to my Creator for still being here at 56 (my Daddy only got 45 years on Earth) with a promise to be better.

I would love to help friends and family find their fasting journey too. Nothing to sell you but my experiences and the resources I use. Please reach out if you have questions. I am here…for life, in love. 🫶🏻

This gorgeous boule is just a little reminder that even though we may think something is broken, to follow through and see what the end result is.

In this circumstance, the dough was definitely appearing to be overproofed yesterday morning when I came downstairs. I was making it for a friend, and doing so because my starter was super happy the day before.

I shaped it and placed it in the banneton for a little rest in the fridge overnight. This morning before work I baked it, and I think the results speak for themselves!!

Let this be a lesson for us in all areas of life. The moral of this story?? Don’t give up!!

Part of my neurodivergence that makes this head spin and spin and spin: even a simple stepped recipe makes me go back and read it again and again while preparing the dish. It’s one of the main reasons I’m usually a free rein type cook.

I seriously read these instructions 4 times tonight!! Am I alone here??

3. Vegetable stock in the pressure cooker
4. Hungryroot lemon peppercorn shrimp with sweet potatoes and green beans
5. Vegetable stock strained and jarred

I love to find purpose out of things others may toss in the trash. Today one of those projects was converting 2 thick skinned, blemished and slightly squishy apples into some delicious homemade applesauce. Such a simple way to make good use out of an ingredient beyond its prime.

Homemade applesauce
Diced apples (I don’t like leaving skin on but you definitely can)
Sugar to taste (I used 2 apples and 2 T raw sugar)
Water (enough to not quite cover your apples)

Bring to a boil, lower the heat and simmer 10-15 minutes until your apples are soft. The next step is up to you and how you like your sauce. Brian likes his smooth and I like a little chunks in there too. An immersion blender works perfect to obtain our perfect compromise.

Stir and pick any rogue seeds, core or skin that made its way in the pan. Delicious warm or cold, with or without a little sprinkle of cinnamon on top.

Ok, so it was yesterday morning BUT I made the video!! AND then I actually posted it the NEXT DAY! I have no idea what this will look like as I go along. Obviously my editing skillset is not strong. I didn’t want to use that as an excuse though to wait (yet again). So here we go, real, frank, usually with a face free from lights, filters (except maybe a light Paris glow ;)) or a makeup brush. I hope you’ll stick around. ❤️

Tried a little experiment today with my sourdough rye. I haven’t kept one of these loaves in ages, but have been questioning if I need a new recipe because the dough is always a little on the 🫣🤨 side for me. Yesterday was no different and so I popped it into loaf pan for the cold proof side and baking.
Definitely not disappointed in the finished product appearance. I’ll keep y’all posted on the overall results after it cools. It will be torture smelling this sweet ye**ty delight for hours without digging in, but I do NOT want to mess with the overall texture by being impatient. Any suggestions on how I can distract myself?? 😝

It’s been a busy start to 2026 and I’ve barely left my house. I definitely have been in a nesting mood for several weeks now. Rediscovering pieces of our big, old, beautiful, (albeit a little bit broken) home that I love so much.

One of the reasons I love it so much is the family that was raised in it. One of the other very powerful reasons is because it has always felt like mine! I feel so comfortable and at peace here. (Which is a bit ironic for how it we lived in it)

But the final reason why I love it so, is that I get a great connection to our Creator here. When I’m still enough, and not distracted by clutter and noise.

Anyway, I hope your 2026 has begun as a peaceful and easy transition too.
