Our hearts are broken tonight but I must share the tragic news about Dr. Tin with each of you. He unexpectedly passed away this week and has a left a hole in all of our lives that can never be filled.

Please know that we value each of you. At this time we request your prayers for our entire family and we will let you know of the details and arrangements as we make our plans.

Thank you in advance for your understanding on our office being closed the rest of this week to pay our respects to Tin. Our plan is to reopen next week and further details will be announced.

𝓘𝓷𝓼𝓽𝓪𝓷𝓽 𝓟𝓸𝓽 𝓟𝓱𝓸 𝓡𝓮𝓬𝓲𝓹𝓮
(Using Instant Pot Ultra 8-quart)

Servings: 6-8 large bowls
Difficulty: Pretty easy

​𝐼𝓃𝑔𝓇𝑒𝒹𝒾𝑒𝓃𝓉𝓈:

To cook the broth

• 2-3 lbs of beef bones, knee or femur, wash then grill in Nuwave oven or broiler 20 min per side, the more you grill, the richer and darker the broth will be and no scum to remove later
• 1-2 lbs of ox tail, cleaned
• 2 medium or 1 large sweet onion cut in half and grill for 20 min also
• 1 large k**b of ginger, grilled

• 3/4 TPsp salt
• 6-7 TBsp fish sauce using 3 crabs brand
• 2-3 TBsp rock sugar (https://www.amazon.com/gp/product/B06ZZGNRHT/ref=as_li_qf_asin_il_tl?ie=UTF8&tag=katiestestk0d-20&creative=9325&linkCode=as2&creativeASIN=B06ZZGNRHT&linkId=c4f82afb8d2c2fe424cccc892160221d)
• 1 small daikon radish, peeled and cut into big chunks
• 1-2 packages of beef meatballs

Put everything in Instant Pot Ultra 8qt, except the beef meatballs. Fill the pot up to the max line with water (Please respect the max line or have a mess later). Use Pressure Cook setting on high for 45 minutes and use Natural Release if you have time, if not Quick Release can be used.
Remove the ox tails and add beef balls and bring to boil using Saute mode. At this time it is ready to be served but if you have time and can wait, close the lid and Pressure Cook it on high for another 45 minutes for dark, rich, flavorful, savory broth. When done, remove some fat oil on the top oil layer with a ladle or oil separator/net (you’ll want to leave some). Remove bones, onion, ginger and spices. Add more water to pass the max line. Add meatballs and bring it to boil by using Saute mode. Now you have a perfect pot of Pho broth!

​𝒞𝑜𝓃𝒹𝒾𝓂𝑒𝓃𝓉𝓈 𝒶𝓃𝒹 𝑜𝓉𝒽𝑒𝓇𝓈:
• 1 to 2 bag of fresh Pho noodles (1 bag usually makes 5 bowls), prime in boiling water 3- 5 seconds
• 1-2 lbs of beef eye round, flank steak, or fillet mignon, thinly sliced (You can ask the butcher to do it for you).
• Green onion and cilantro, chopped
• Sweet onion, thinly sliced
• Bean sprout, basil and sawtooth cilantro
• Lime wedges
• Jalapeño Pepper, thinly sliced
• Hoisin and Sriracha sauce

To assemble the bowl, add cooked Pho noodles then top with sliced beef. Pour boiling broth and meatballs, add sliced white onion and sprinkle chopped green onion and cilantro. Serve with basil, sawtooth cilantro, bean sprout, lime wedges and sliced jalapeño pepper.

Note: You can completely skim fat oil off the the broth by cooling it until the fat particles solidify in the refrigerator.
