sweet potato brownies just got an UPGRADE because we are using the sweetest, creamiest from Melissa's Produce (dc: healthyhelper) to give them the most FUDGY texture imaginable.

these vegan gluten-free oreo brownies are totally plant-based, grain-free, and packed with FIBER thanks to the sweet potatoes. make these at home for RICH tasting brownie that’s secretly super good for you. 😉

Ingredients:
-1/2 cup coconut flour
-1 tbsp baking powder
-1/2 tsp vanilla bean powder
-1/3 cup black cocoa powder
-2-4 tbsp date syrup (dc: healthyhelper)
-1 medium japanese sweet potato (about 300g), peeled, diced, and microwaved or steamed
-1 cup almond milk + a little more as needed to thin the batter

directions:
-preheat oven to 350 degrees F.
-place all ingredients into a food processor and blend until a very thick batter forms.
-press the brownie batter into a parchment paper lined baking dish and bake for 20 mins.
-remove from over, let cool completely, then slice and serve!
