Pineapple Orange Upside Down Quick Cake Recipe

Prep time: 10 minutes

Servings: Makes 1 serving

INGREDIENTS
1½ teaspoons butter, melted
3 tablepsoons + 1 teaspoon water, divided
1 package Orange Dreamsicle Quick Cake Mix
1 pineapple ring packed in juice, drained well and patted dry
1 maraschino cherry, stemmed and patted dry

DIRECTIONS
In small bowl, combine butter, 1 teaspoon water and 2 tablespoons Orange Dreamsicle Quick Cake Mix packet 2 (discard remaining icing mix or save for another use).

Pour into the bottom of a greased microwave-safe mug or ramekin wide enough to fit the pineapple ring (approximately 3 inches wide). Top with pineapple ring and the cherry in the center.

Prepare Orange Dreamsicle Quick Cake Mix packet 1 according to package directions using 3 tablespoons water, Spread batter over pineapple and cherry.

Microwave on HIGH 1½ minutes. Let stand 2 minutes. Run a knife along the edges of the mug to help separate cake from the mug. Invert the cake onto a plate and uncover.
