today’s agenda: cook👩🏻‍🍳

one of my absolute favorite things to do on Saturday mornings is to waltz around the farmers market and discover all the beautiful produce that’s in season. I love being able to relax and feel unhurried as it’s a time for me to just enjoy myself. Nurturing my inner longing to treat myself well and nourish my body. It also feels incredibly satisfying to know where my food is coming from and knowing I’m getting foods at peak freshness. A lot, if not all of my meal ideas revolve around what I can find locally. It’s created so much ease for me and gets me excited to structure my weekly meals around what nature provides.

Buying the majority of my food locally is also a habit I’ve committed to as I know the most nutrient-dense and supportive foods for our health will come from close by.

Today I’m embracing a stocked fridge, a soon-to-be messy kitchen and beautiful meals that satisfy🙌🏼

One of my biggest requests this year was to host more COOKING CLASSES💕

After a sold out season at the , multiple requests for private lessons and an inner knowing that my path has been turning down a more aligned direction, I’ve decided to follow this passion and create a cooking class series focused on creating meals using whole foods with nourishment AND flavor being the top priorities.

Tonight is my first night teaching a private class at 👩🏻‍🌾 with more upcoming classes being held at 👩🏻‍🍳

I’m opening up sign up’s for my upcoming class focused on delicious fall salads, homemade dressings and fundamental knife skills that are imperative to understand when working with leafy greens.

I love the hands on experience of working with food as most of us learn best by visually watching and applying what we are trying to implement, while leaving space for inquiring minds to ask important questions.

DINNER IS SERVED🩷

I’m fully convinced that an amazing sauce is all you’re missing if you think your dinners are bland, boring or need a little spice. 🌶️

One of the EASIEST ways to eat well, honor your health and cook really delicious meals is to have staple recipes you can rely on that you KNOW are balanced and FEEL-GOOD in your body!

I am constantly grilling protein and roasting vegetables so whipping up a new green sauce to elevate my meal was invigorating and inspiring (not stressful).

Hi! I'm Emily - a multi-passionate entrepreneur, nutrition coach and holistic chef💕👩🏻‍🌾🌿👩🏻‍🍳

I love spending my time creating local, seasonal, organic meals from scratch whilst trying my best to contain a messy kitchen filled with tantalizing sauces and salad dressings, garden-fresh produce, fermented yummies and meals that taste divine and honor a high state of health.

I’m unconcerned with diet rules and follow my intuition with a focus on high-quality ingredients and balance.

I know what’s best for my body and I don’t question it.

I'm most connected to my food because of focusing on color, flavor, seasonality, balance and complimentary culinary pairings more than nutrition facts, diets, numbers.

I love dessert and am always making something on the healthier side that feels good in my body and tastes like real dessert too.

I've learned how to feel joy in the process of preparing my meals and staying deeply connected to my desire to nourish myself.

Doing my best while being open and curious instead of being perfect is something I am continuing to embrace.

In case you haven't guessed, I don't teach my clients any particular diet, intermittent fasting, calorie counting, macro-nutrient specifics, deprivation or anything that won't ultimately lead to creating consistency and peace with food because of over-complication.

I love teaching whole-food nutrition, cooking basics, how to love your food, how to nourish your body, how to eat within the seasons, what food brands to purchase for highest quality of nutrition and best value, how learn to prioritize your health and yourself without feeling guilty, sustainable lifestyle habits and how to create a diverse, balanced gut microbiome.

I believe a big reason why I'm here is to connect humanity back to the food that was meant for our bodies to eat and enjoy without being robbed of pleasure and satisfaction.

I created beets and pretty eats, LLC because I wanted to inspire, motivate and educate women to create seasonal, wholesome meals with ease, using the best ingredients possible. I believe that food should not only be highly nutritious, but it should also be made with love, heart and adorned with culinary artistic-ness. I want people to live pain-free and to reduce inflammation in the body while at the same time nourish the mind and soul with indulgences every now and then. You deserve to feel confident in how to plan weekly meals and eat within the seasons, effectively grocery shop, organize your kitchen so it brings you joy – not chaos, and to make cooking an inspiring, heart-giving experience.
