I get so excited every year when the Brussels sprouts stalks arrive!!! Adding these to my Greek chicken sheet pan dinner- not a traditional Greek ingredient- BUT I always think of seasonal eating with Greek cuisine so I think an exception can be made!!!

Have you ever left your doctor’s office being told your labs “look fine” — yet you know something still isn’t right?

This is where functional blood chemistry changes the game.

In traditional medicine, labs are only flagged when they fall outside of a very wide “normal” range — meaning dysfunction has already set in.
But functional ranges look for optimal patterns, catching imbalances before they become disease.
For example — this is my case study final for my nutritional blood chemistry course:
• Only 7 markers were out of lab range (the doctor would call these abnormal).
• But 26 markers were out of functional range — clear signs that the body is already struggling with inflammation, nutrient depletion, and metabolic stress.

That’s the difference between being proactive and reactive.
Waiting until your numbers fall completely off the cliff makes recovery harder. Functional analysis helps you recognize early warning lights — long before symptoms spiral.

Think of it like your car’s dashboard: you wouldn’t ignore the “check engine” light until the car stops running. Functional nutrition looks under the hood early — so we can restore balance before breakdown happens.

Optimal health isn’t about being “within range.” It’s about being in balance.
If your intuition says something’s off — even when your labs look “normal” — that’s your sign to dig deeper.

Do you think I could fit any more veggies on this sheet pan?!?? 🤣 simple, easy dinner- marinated chicken thighs in a lemon Dijon vinaigrette with Brussels sprouts, sweet potatoes, cauliflower, red onions and my favorite- fennel!! Took 10 minutes of prep, heading into the oven for 30 minutes and rainy evening meal is DONE! ✅

Really fun group for my charcuterie class at Clark College tonight!! It’s been a minute since I made a big board! We also made fresh ricotta, tasted cheese like a sommelier tastes wine and they learnedly way more about the history cheese than they probably wanted to know 😁Next one is December 2nd!
