A delicious treat we can absolutely get behind. Simple, sweet, and always satisfying!

Dark chocolate-covered strawberries

Ingredients:
4 ounces 70% dark chocolate (use baking squares instead of chips)
12 large strawberries (preferably with long stems)

Instructions:
Line a baking sheet with parchment paper.
Put 2 inches of water into a pot and bring to a simmer over med-high heat.
Put the chocolate squares into a heat-proof bowl or double boiler over the pot of simmering water.
Stir occasionally to facilitate melting and prevent burning.
When chocolate is melted, remove from heat and allow to cool slightly.
One at a time, hold a strawberry by the stem and dip it into the melted chocolate.
Allow the excess chocolate to drip back into the bowl and lay the coated strawberry on the prepared baking sheet.
Repeat with all 12 strawberries.
Refrigerate the strawberries until the chocolate is set (at least 15 minutes).
Keep refrigerated until ready to serve.

Level up your salad game!

Instead of a traditional salad with lettuce and the basics, try a salad *without* lettuce, and introduce some Greek flavors!

This cucumber Greek salad is a quick 10-minute, low-sugar, low-carb dish you can add to any meal. To make a vegan version, just swap the feta cheese for a salty vegan cheese of your choice. Since BBQ season has officially begun, this is a great salad to serve at outdoor summer parties.

Ingredients:
2 cucumbers, peeled and chopped into ¼ inch slices
4 to 6 Roma tomatoes, chopped
½ of a red onion, sliced
¼ cup olive oil
1 ½ tablespoons lemon juice
2 teaspoons dried oregano
½ cup crumbled feta cheese
Salt and pepper, to taste
Black olives, pitted and sliced (to taste)

Directions:
In a large bowl, combine cucumbers, tomatoes, and onions.
In a smaller bowl, mix the olive oil, lemon juice, and dried oregano. Pour over the vegetables and mix well. Season salad with salt and pepper. Sprinkle feta cheese and olives over the top of the salad and mix. Taste and adjust spices if needed. Refrigerate until ready to eat.

Tacos with a twist!

These grilled eggplant tacos and light, tasty, and nutritious!

Ingredients:
1 large eggplant
½ cup corn (fresh, canned, or frozen)
1 large tomato, seeded and cut into small cubes
½ cup black beans
1 cup cheddar and Monterey Jack cheese, shredded
1 tablespoon olive oil, for brushing
salt and pepper, to taste
handful fresh cilantro
avocado slices
lime wedges

Directions:
Preheat the oven to 375° F.
Cut the eggplant into ½-inch thick slices (or desired thickness). Brush both sides of the eggplant slices with olive oil and cook on a stove-top, cast-iron grill pan for about 3 minutes on each side.
Meanwhile in a small glass bowl, add the corn, tomato, beans, cilantro, and season with salt and pepper to taste. Mix to combine.
Remove the cast iron grill pan from the stove top. Spoon some of the corn and bean mixture onto each eggplant slice. Top with shredded cheese and bake for 5 to 7 minutes or until the cheese is melted.
Garnish with fresh cilantro. Serve with avocado and lime.
