🍋 Healthy Sheet Pan Greek Chicken Dinner 🇬🇷
Simple, colorful, and full of flavor! This one-pan meal combines roasted veggies, crispy chicken thighs, and a zesty Greek marinade — all done in about 40 minutes.

✨ Ingredients
• 5–6 chicken thighs (skin-on or boneless/skinless, 1.5–2 lbs)
• 1/2 cup avocado oil or olive oil
• 2 tbsp lemon juice (about 1/2 lemon) 🍋
• 1 tbsp Dijon mustard
• 1 garlic clove, minced
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1/2 tsp sea salt
• 1 bell pepper (red, orange, or yellow) 🌶️
• 1/2 large red onion
• 4 med Yukon gold potatoes 🥔
• 1 cup cherry tomatoes 🍅
• 1/4 cup Kalamata olives
• 1/2 cup marinated artichoke hearts
• 1/2 cup feta cheese
• 1/3 cup fresh basil 🌿
👩🍳 Instructions
1️⃣ Preheat oven to 425°F. Lightly grease a large sheet pan. Place chicken thighs in a large bowl.
2️⃣ Whisk together the marinade: oil, lemon juice, mustard, garlic, oregano, thyme, and sea salt.
• Reserve a few tbsp, and pour the rest over the chicken thighs.
3️⃣ Let chicken marinate ~10 minutes while you prep veggies. Dice potatoes and peppers into chunks, slice red onion, and keep cherry tomatoes whole.
4️⃣ Spread veggies on sheet pan and toss with the reserved marinade to coat evenly.
5️⃣ Nestle chicken thighs on top of veggies and roast for 25 minutes.
6️⃣ Remove pan, add artichoke hearts, olives, and feta. Bake another 8–10 minutes, until chicken is golden and veggies are roasted.
7️⃣ Top with fresh basil, salt to taste, and serve hot! 😋
