ROASTED BROCCOLI & CHICKPEA SALAD WITH TAHINI-PARMESAN DRESSING! By the incredible 😍😍

She writes:
Salads should not be boring—so make your veggies fancy this year🤌 This one is flavorful & super easy to make 👊 Perfect for meal prep

For the broccoli & salad:
2 large heads broccoli, chopped
2 1/2 tbsp olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 cup chopped dates
1/2 cup chopped cashews
1/2 cup chopped cilantro
1/2 cup finely chopped red onion

Fore the chickpeas:
1 15-oz can chickpeas, rinsed and drained
1/2 tbsp olive oil
1/2 tbsp maple syrup
1/2 tsp salt
1/2 tsp paprika

For the dressing:
6 tbsp tahini
1/4 cup grated Parmesan
1/2 tbsp maple syrup
1/4 tsp salt, or more to taste
Pepper to taste
Juice of 1 lemon
1 clove minced garlic
3-4 tbsp water

1️⃣Preheat the oven to 425. Add a large sheet pan to the oven while it preheats. 2️⃣Add the broccoli to the sheet pan, add the olive oil, salt, garlic powder and oregano and toss to coat. Place it in the oven for 25-30 minutes, tossing halfway. 2️⃣Place the chickpeas on a parchment lined sheet pan and place in the oven to dry roast for 10 minutes. Remove them from the oven, add the oil, salt, paprika and maple syrup and toss to coat. Place them back in the oven for 8-10 minutes. 3️⃣Make the dressing. Add the tahini, Parmesan, maple syrup, salt, pepper, lemon juice, garlic and water. Mix until smooth. 4️⃣ Add the broccoli, dates, onion, cashews and cilantro to a large bowl. Add a few spoonfuls of dressing then toss to combine. 5️⃣Add the chickpeas and more dressing and toss to combine.

🧘‍♂️✨ Walk for Peace - 2,300 miles of hope.

I was so blessed to see the monks from the walk for peace.

I drove to spotsylvania VA to see the monks as they got closer to DC. I’m guessing the crowds will be much bigger when they get here. I hope to see them again once they arrive. They stopped to chant over a young boy in a wheelchair, it was beautiful.

What is The Peace Walk?

Nineteen Buddhist monks from Fort Worth, Texas, are walking on foot across 10 states to Washington, D.C., beginning Oct. 26, 2025, to share a message of unity, healing, compassion, and mindfulness.

Their journey, met with cheers, prayers, and thousands of supporters, highlights the power of presence and peace in a divided world. 🇺🇸💛

They’re expected to arrive in Washington, D.C. on Feb. 10, 2026, and return home on Feb. 14, 2026. I will post more about it next week. What a joy to be able to follow their path of peace and compassion.

“…I needed to find a new way to get my health in check.

I’ve now been working with Dr. Dae for about three months. I’ve been clean eating. Eating whole foods, eating real foods and not processed, packaged foods. At first, it was kind of tough, but once you get into the swing of it, you start to feel better and you begin to see results, so it makes you want to continue.

Sleep was also one of the things that I wanted to work on, so now I’m sleeping better. I sleep for a longer period of time and don’t wake up in the middle of the night. I’ve seen inches in my clothing, they’re all just looser. I’ve lost more than a couple pounds. My skin has gotten a lot better, with a lot less breakouts.

But overall, I have to say the best thing is the education that you gain from working with Dr. Dae and her team. They teach you about your body through an in-depth health assessment, so you can see what is actually going on with your body down at a cellular level. It has been really neat to learn about how food can help to change or reverse whatever issues you have going on with your body.”
