Raspberry Protein Muffins 💪🏻
258 cal • 12g protein • 13g fat • 32g carbs

240g flour flour
80g vanilla whey/casein protein
95g allulose
15g baking powder
4g salt
3g xanthan gum
1g stevia
180g water
120g plain Greek yogurt
90g neutral oil or apple sauce
3 eggs
1 cup raspberries

Preheat oven to 350°F and line a muffin tin.
Whisk together the dry ingredients.
Add water, yogurt, oil, and eggs, then mix until just combined.
Gently fold in the raspberries.
Divide into 10–12 muffins.
Bake 18–22 minutes until the tops are golden and spring back.
Cool 5 minutes in the pan, then move to a rack.
