High-Protein Blueberry Keto Cheesecake
250 cal | 17g protein | 15g fat | 12g carbs
12 slices

This is the easiest keto cheesecake that actually tastes like real New York-style cheesecake. Dense, creamy, high-protein, and topped with a simple blueberry reduction.

ALMOND FLOUR CRUST
175g blanched almond flour
45g powdered erythritol
1g sea salt
35g melted butter
60g egg whites
2g vanilla

Mix. Press into a lined 9-inch springform.
Bake 325°F for 10–12 minutes. Cool.

CHEESECAKE FILLING
680g low-fat cream cheese (room temp)
150g powdered erythritol
240g eggs (about 4)
115g plain Greek yogurt
60g 1% milk
30g whey/casein protein blend
2 tbsp cornstarch
15g lemon juice
10g vanilla
1g salt

Beat cream cheese smooth.
Add sweetener.
Mix in protein + cornstarch.
Add eggs one at a time.
Mix in remaining ingredients just until smooth.

Pour over crust.

Bake at 325°F for 50–60 min (center should still jiggle).
Turn oven off, crack door, cool 1 hour.
Chill minimum 4 hours (overnight is best).

BLUEBERRY SAUCE
16 oz frozen blueberries
1/2 cup monk fruit
2 tbsp cornstarch slurry

Cook until thick. Cool. Top before serving.

Use a whey/casein blend for texture. 100% whey will turn rubbery.

Raspberry Cottage Cheese Donuts

Ingredients
120 g self-rising flour
120 g cottage cheese
48 g sugar-free sweetener
1 tbsp water (only if needed)
40 g raspberries

Equipment
Metal donut pan
Blender
Mixing bowl + spatula

How to make
Preheat oven to 350°F (175°C) and grease a metal donut pan.
Blend cottage cheese until completely smooth, then mix in the sweetener.
Gently fold in the self-rising flour until a thick batter forms.
Add water 1 tablespoon at a time only if the batter is too dry to scoop.
Fold in raspberries.
Fill donut cavities about Âľ full.
Bake 22–25 minutes until set.
Cool in the pan 5–10 minutes, then transfer to a wire rack.
