Pumpkin Spice Half Marathon with my hubby and all of our running friends ❤️ So proud of everyone! The hubs and I both wanted to set a new benchmark since it's been a while since we actually 'raced.' I was going for under 2:10 and managed 2:04:55, while he aimed for under 2:00 and got 1:58:41. Not our personal records, but we beat our goals and now have something to beat next time! ❤️💪🏼

Who didn’t want to chop veggies and cook tonight? ME 🙋🏻‍♀️ So, I grabbed a frozen cheese pizza, pre cut veggies, and additional protein. And in 10 minutes had a balanced meal 🤗

🍕Amy’s Pizza

Additions ⬇️
🥦 Veggies: Red onions, tomatoes, bell peppers
🍗 Protein: Cottage cheese, turkey pepperoni

❓Why this works?
A frozen pizza already has carbs, protein, and fat. I added veggies for volume, micronutrients, and fiber. The dollops of cottage cheese and turkey pepperonis added lean protein for a nice boost!

Kid-friendly dinner alert! 🤣 No weird veggies, just corn!

🍽️ Here's why this meal works:

✅ Protein: Ground turkey, beans
✅Carb: corn, tortillas, beans
✅Fat: cheese
⭐️ Side of veggies for volume and fiber

Ingredients:
1 lb Ground Turkey
1 packet Taco Seasoning
16 oz Fat Free Refried Beans
15 oz Red Enchilada Sauce
1 cup Corn, frozen
12 Yellow Corn Tortillas
1 1/2 cup Mexican Cheese

Directions:
1. Brown turkey, add beans & corn. Combine.
2. In a greased 9x13 baking dish, layer tortillas, meat mix, sauce, cheese. Repeat until out of meat mixture.
3. Bake covered at 350°F for 30 minutes.

Nutrition:
Calories: 294
Protein: 25g
Carbs: 17g
Fiber: 4g
Fat: 13g

Intra Run: I take in 25g carbs every 3 miles and drink LMNT from my handheld throughout the run. That’s what works for me and my stomach. Today, I used 3 Go Gels.

10 miles 🏃‍♀️
No wall, no crash — just steady energy start to finish. Because when you fuel right, your body shows up for you 😎

Nutrition:
Before the run: toasted sour dough & a banana —50g carbs total.
Intra run: 2 Go Gels, dried fruit (mile 3, 6, & 9)— 75g carbs total. LMNT throughout.

Marshmallows
