It’s warm, comforting, and made with ingredients you probably already have at home.

💛 Chickpeas add fiber and protein to help keep you full. 💚 Rosemary and garlic create a rich flavor without needing cream or cheese.

🥣 Perfect for a quick lunch or an easy weeknight dinner.

🛒 Ingredients
✔️ 3 cloves garlic, minced
✔️ 1 sweet onion, chopped
✔️ 1 Tbs fresh rosemary, chopped
✔️ 3 Tbs olive oil
✔️ ½ tsp red pepper flakes
✔️ 5 cups canned chickpeas, drained and rinsed
✔️ 4 cups low-sodium vegetable broth
✔️ Salt and pepper to taste

👩‍🍳 Quick Directions
➡️ Sauté garlic, onion, rosemary, and red pepper flakes in olive oil
➡️ Add chickpeas and broth
➡️ Simmer until soft
➡️ Blend until creamy
➡️ Season and serve

✅ Tip: It thickens as it cools, so you may need to add additional stock when rewarming.

Fall is here in a couple weeks, and my Roasted Chickpea Harvest Bowl is loaded with the season’s most delicious roasted veggies.

Crispy spiced chickpeas and sweet apples come together in one unbelievable dish, sweetened with tangy Maple Mustard Dressing 💥

Here’s what you’ll need for the crispy chickpeas:
1½ cups canned chickpeas, drained and rinsed
¼ tsp ground coriander
¼ tsp ground cumin
½ tsp paprika
¼ tsp chili powder
⅛ tsp salt
⅛ tsp black pepper
1 Tbsp olive oil

For the bowl:
2 Tbsp olive oil
1 lb sweet potato, peeled and chopped
1 lb Brussels sprouts, halved
1 tsp thyme
5 cups kale, shredded
2 apples, chopped
⅔ cup pecans, chopped

For the Maple Mustard Dressing:
Juice of 1 lemon
¼ cup olive oil
2 Tbsp balsamic vinegar
2 tsp maple syrup
2 tsp Dijon mustard
Black pepper, to taste
