Leftover Easter ham? - I've got you! Turn it into a quick, high-protein breakfast with these ham and egg cups! They’re delicious, easy to prep ahead, and make mornings a breeze while keeping your breakfast healthy and satisfying.

Hashbrown, Ham & Gruyere Egg Cups
serves: 8

Ingredients:

16 ozs Hashbrowns (thawed)
12 Eggs
1 cup Gruyere Cheese
6 ozs Sliced Ham (chopped)
1/3 cup Parsley (chopped)
Sea Salt & Black Pepper (to taste)

Directions:
1. Preheat the oven to 400ºF and lightly grease a muffin tray. Press the hash browns firmly into each cup to form a well.
2. In a bowl, whisk the eggs. Add the cheese, ham, and parsley, then season with salt and pepper. Mix well.
3. Pour the egg mixture into the hash brown wells. Bake for 12 to 15 minutes or until the eggs are set.
4. Let the egg muffins cool slightly before removing them from the tray. Enjoy!

Grateful to join the West Bend Area Chamber of Commerce, Leadership West Bend, and the Wisconsin Department of Transportation at West Bend High School for today’s press conference launching Distracted Driving Awareness Month.

During the event, I proudly took the pledge.

As a business owner and active member of this community, I believe we share a responsibility to support initiatives that protect and strengthen where we live and work. Promoting safer roads is one of those efforts.

I’m especially proud to serve on the committee for Leadership West Bend and to support the Leadership West Bend Class of 2026, who are leading this important initiative.

Distracted driving is preventable. Every one of us has the power to make a simple choice that could save a life.

This bowl is built to keep blood sugar steady… which means more consistent energy and fewer cravings later on.

▪Protein from Greek yogurt + protein powder helps slow glucose release
▪Healthy fats (peanut butter + nuts/seeds) further stabilize blood sugar
▪Fiber from banana + seeds supports satiety and digestion
Instead of a quick spike and crash, this gives you a more sustained, balanced start.

Protein-Loaded Banana & Smoothie Bowl
serves: 1

Ingredients:

1 Banana (divided)
3/4 cup Plain Greek Yogurt
1/4 cup Vanilla Protein Powder
1 tbsp All-Natural Peanut Butter
2 tbsp Water
1 tsp Slivered Almonds
1 tsp Pumpkin Seeds
1 tsp Walnuts (chopped)
1 tsp Pecans (chopped)

Directions:
Add half of the banana, yogurt, protein powder, peanut butter, and water to a blender. Blend until smooth. If the mixture is too thick to blend, add a splash of water at a time.
Pour into a bowl. Slice the remaining banana. Top the bowl with banana, slivered almonds, pumpkin seeds, walnuts, and pecans. Enjoy!
