Keto Fried Chicken

To make a Keto Friendly fried chicken we skipped the flour and went for pork rinds and Parmesan. Almond flour helps adhere everything together as well for a perfectly crisp chicken. We also baked this chicken to skip all of the unnecessary oil, but it still bakes into a chicken breast that you would swear was fried. Feel free to use thighs or drumsticks as well, just know the bake time will be longer! If you go for boneless skinless chicken you'll want to decrease the bake times.

INGREDIENTS
FOR THE CHICKEN
6 bone-in, skin-on chicken breasts (about 4 lbs.)
Kosher salt
Freshly ground black pepper
2 large eggs
1/2 c. heavy cream
3/4 c. almond flour
1 1/2 c. finely crushed pork rinds
1/2 c. freshly grated Parmesan
1 tsp. garlic powder
1/2 tsp. paprika
FOR THE SPICY MAYO
1/2 c. mayonnaise

Tofu scramble with shredded cabbage and chilli sambal

INGREDIENTS
2 tbs light-flavoured oil
2 garlic cloves, crushed
2.5cm piece fresh ginger, peeled, grated
4 spring onions, finely chopped
1 1/2 tsp each curry powder, ground turmeric & ground coriander
560g silken tofu, drained
CHILLI SAMBAL
5 red chillies, roughly chopped
4 garlic cloves, roughly chopped
2.5cm piece galangal, peeled and roughly chopped
2.5cm piece fresh ginger, peeled and roughly chopped
1 large eschalot, roughly chopped
3 tbs light-flavoured oil
1 tbs chilli flakes
60g palm sugar, crumbled or grated
2 tsp tamarind paste
1 tbs tamari
Juice of 1/2 lime
TO SERVE
1/4 firm white cabbage, shredded
1 medium cucumber, peeled into ribbons
1/2 cup each loosely packed mint & coriander leaves
Juice of 1 lime
Olive oil
4 slices sourdough bread

How To:

Use the hands anchored to the fronts of knees or ground.
Inhale and pull the heart and chest through the arms lifting the chin gently.
Even though the belly is moving forward, keep the lower navel pulled in slightly to protect the low back.
Exhale and round the back, dropping chin to chest; really feel the shoulder blades move apart here.

Serve the seared spicy fish in crisp taco shells with piles of lettuce and an avocado, tomato and jalapeño salsa.

INGREDIENTS
600g skinless white fish fillets (such as flathead), pin-boned
Large pinch of cayenne pepper
1 teaspoon ground cumin
1 tablespoon olive oil
8 taco shells
1 baby cos lettuce, finely shredded
Coriander leaves, to serve
SALSA
2 ripe tomatoes
1 green capsicum, finely chopped
1 avocado, flesh finely chopped
1 tablespoon pickled sliced jalapeño chillies, drained, finely chopped
1/2 red onion, thinly sliced
2 tablespoons coriander leaves
1 garlic clove, crushed
1/2 teaspoon ground cumin
1 tablespoon lime juice
1 tablespoon olive oil
