Big Mac casserole: 6 servings

-2 lbs lean ground beef (I used 93%)
-1 small yellow onion, diced
-2 cloves garlic, minced
-2 c shredded cheddar cheese, divided
-~20 or so dill pickle slices
-1 Tbsp minced onion
-1 Tbsp sesame seeds
-bag of lettuce or 1 head lettuce, chopped
-salt & pepper to taste
-1 tsp olive oil for sautéing

For the sauce:
-4 Tbsp light mayo (can sub for 2 Tbsp regular)
-1/4 c Fage 2% Greek yogurt
-Tbsp Worcestershire sauce
-2 Tbsp SF ketchup (I like G Hughe’s brand)
-2 Tbsp pickle juice
-1 /2 Tbsp yellow mustard
-1 tsp
-1/4 tsp of garlic powder, onion powder, and smoked paprika
-Salt & pepper to taste

Over medium-high heat sauté garlic/onion with olive oil. Add in ground beef and cook through, season w/ salt & pepper. Add 1/2 of the Big Mac sauce into the pan. Add in 1 c of the cheddar cheese and mix/cook until melted. Pour into a 13x9” casserole dish and top with remaining cup of cheese, pickle slices, dried minced onion, and sesame seeds. Bake at 350F for 15 minutes then broil for ~3-5 minutes. Remove from oven and drizzle with the rest of the Big Mac sauce. Serve over shredded lettuce.

Nutrition per serving: 440 cals | 28 g fat | 6 g carbs | 1 g fiber | 42 g protein
