A single serving of Brazil nuts may lower cholesterol levels faster than statin drugs and keep them down even a month after eating them just once.

Adding Brazil nuts may be a helpful strategy for lowering cholesterol, but we also need to consider overall dietary patterns. Plant-based diets have been shown to lower cholesterol just as effectively as first-line statin drugs, but without the risks.

The best that cholesterol-lowering statin drugs appear to do is an absolute risk reduction of 3.1 percent over six years. If Dr. Esselstyn’s work can be replicated in a randomized controlled trial, then a whole food, plant-based diet will have been shown to work 20 times better with an absolute risk reduction of 60 percent after less than four years.

To drastically reduce LDL cholesterol levels, it appears we need to drastically reduce our intake of trans fat, which comes from processed foods and naturally from meat and dairy, as well as saturated fat, which is found mainly in animal products and junk foods. Dietary cholesterol, which is found exclusively in animal-derived foods, especially eggs, plays a lesser role, but we should lower intake of that, too.

In an upcoming series, I talk about the pros and cons of statin drug therapy. Spoiler: If you have a history of heart disease or stroke, taking a statin is recommended.

Broccoli post!! Hack and Hold! I learned a lot from One thing I learned was how to cook the cruciferous vegetable family: “The main active ingredient in broccoli is thought to be sulforaphane, which may protect our brains, protect our eyesight, protect our bodies against free radicals, boost our detoxification enzymes, and help prevent and treat cancer.

The formation of sulforaphane is like a chemical flare reaction, requiring the mixing of a precursor compound with an enzyme, which is destroyed by cooking. This may explain why we get dramatic suppression of cancer cell growth from raw broccoli, cauliflower and Brussels sprouts, but hardly anything from boiled, microwaved or steamed (except for microwaved broccoli, which actually retains some cancer fighting abilities).

There is a strategy to get the benefits of raw in cooked form. In raw broccoli, the sulforaphane precursor, called glucoraphanin, mixes with the enzyme (myrosinase) when you chew or chop it. If given enough time—such as when sitting in your upper stomach waiting to get digested—sulforaphane is born. The precursor and sulforaphane are resistant to heat and therefore cooking, but the enzyme is destroyed. No enzyme = no sulforaphane.

The “hack and hold” technique—if we chop the broccoli, Brussels sprouts, kale, collards, or cauliflower first and then wait 40 minutes, we can cook them all we want. The sulforaphane is already made; the enzyme has already done its job, so we don’t need it anymore.”
