Western MA News Meal Prep Monday segment!
Healthy Easy Cheesecake
Makes 3-4 servings
75 calories and 10g protein without toppings
1c lowfat cottage cheese
1 container ~5oz Greek yogurt (choose your favorite flavor)
1 egg
Mix in blender
Pour in oven safe ramikin
Bake at 350 for 20 min
Chill in freezer for 30-45 min or longer in refrigerator
Top with cool whip and fruit of choice if desired. Enjoy!

Recipe: Mom’s Meatloaf
2lbs ground turkey
2 large eggs or 4 egg whites
1 jar salsa
1/4c Italian bread crumbs

Combine all ingredients

Cook at a temperature of 375 F for one hour and 15 min

Can top with ketchup or BBQ sauce for the last 10 min and turn temp of to 400 F to brown the top of your meatloaf.

On the news! WMASS news segment Meal Prep Mondays. Today I made peanut butter energy bites. Great snack, so yummy!!

Recipe: Peanut Butter Eneray
Bites
1 cup natural peanut butter
14c honey or
coconut palm syrup
1 tsp. vanilla extract
1/3 cup flaxseed meal
1 tbs mini Chocolate chips
1/3 cup unsweetened shredded coconut
1/2 cup rolled oats
I tbs chia seeds

makes 15-20 bites

combine peanut butter, honey and vanilla.
Add coconut, flaxseed, oats and chia seeds. Mix until able to form balls that stick, 1 tsp. size. Store 1 week in refrigerator or 1 month in freezer
