I love all the fresh veggies that summer brings. They make for so many delicious meals! You can also try this recipe with zucchini or butternut squash noodles. However you serve this one up, it's delicious!

Summer Pesto Noodle Salad
Ingredients
- 1 large bunch of fresh basil ( - 2.5 oz/ - 140g), leaves picked and rinsed
- 1 1/2 Tbs olive oil
- 1 1/2 Tbs nutritional yeast (substitute with parmesan cheese if not vegan)
- 1 Tbs lemon juice
- 2 tsp miso paste (optional)
- 1 tsp salt, add more to taste
- 2 cloves garlic, peeled
- 1/4 cup (35g) walnut halves
- 2 large summer squash (zucchini or yellow squash) ( - 17.5 oz/ - 500g)
- 1 large ripe yellow peach, peeled and diced
- 1 cup (135g) cherry tomatoes

Preparation

In a food processor, blend the basil, oil, nutritional yeast, lemon juice, miso paste, salt, garlic, and walnuts together until smooth. Set aside.

Spiralize the squash using Blade B. Once the squash has been spiralized, I like to give all the noodles several rough chops so that they're easy to eat (otherwise, the noodles are too long). Chop up the parts of the squash that did not get spiralized and add them to the salad. If you do not have a spiralizer, create vegetable noodles with a julienne peeler or vegetable ribbons with a regular peeler.

In a large bowl, toss the noodles, diced peaches, cherry tomatoes, and 1/3 to 1/2 cup of the pesto sauce together.

Store the unused pesto and leftover salad in separate containers and refrigerate.

Summer Beet Side Salad
Ingredients
- 5 beets, preferably organic.
- 1 English cucumber, sliced
- Really good olive oil (don't bother with cheap store-bought oil for this)
- A few sprigs of parsley
- 1 tomato

Preparation

To roast the beets: slice off the stems, wash them carefully, and wrap them in an aluminum foil pouch with a drizzle of olive oil and a little table salt (essentially set them on a piece of aluminum foil, and fold over the edges to make a tight little envelope). Beets will take about an hour to roast at 350 degrees. Cool before handling. Then, peel away the skins with the help of a paper towel, back of a knife, and/or a little cool water.Leave beets out to cool (this is a cold salad). Once cool, quarter.Assemble ingredients; drizzle olive oil over the top of the salad and sprinkle a touch of table salt.Small servings.

Summer Veggie Bake
Ingredients
- 2 ears of corn, kernels cut off the cob
- 1 tsp Garlic Powder
- 1 Lemon, Juiced
- 1 cup Low Fat Milk (1%)
- 1½ cups Low Sodium Chicken Broth
- 1 tsp Onion Powder
- 1 cup orzo
- ½ cup panko
- 1 tsp Paprika
- ¼ cup Shredded Parmesan Cheese
- ¼ cup parsley, chopped
- 1 tsp Pepper
- 1 rotisserie chicken
- ¼ cup Shredded Mozzarella Cheese
- 3 tomatoes,sliced into ¼ inch slices
- 1 Zucchini (8 oz), sliced into ¼ inch slices

Preparation

Preheat the oven to 400 degrees Fahrenheit. In a medium saucepan, add milk and chicken broth and bring to a boil.

Add orzo and reduce to medium heat. Cook orzo until tender and liquid is absorbed, about 15 min.Meanwhile, mix chicken, cheese, spices, lemon, corn and parsley.

Add mixture to the orzo and stir until evenly distributed.

Pour out orzo mixture into a 8 by 8 glass baking dish. For the topping, layer zucchini and tomato, alternating each veggie.

Sprinkle panko, garlic powder and pepper over the veggies.Spray the panko evenly with olive oil cooking spray.

Place in oven and cook for 40 minutes. Then broil for about 2 minutes to get the top really golden brown.

Serve immediately. Enjoy!
