Warm up this season with our favorite fall recipe: Butternut Squash Soup

1 medium butternut squash (peeled, seeded, cubed)

1 apple (peeled, chopped)

1 carrot (sliced)

1 small onion

3 cups low-sodium broth

1 tsp fresh ginger, ½ tsp cinnamon

Salt & pepper to taste

(Optional) splash of coconut milk or Greek yogurt

Instructions:

Sauté onion until translucent.

Add squash, carrot, apple, broth, ginger, cinnamon → simmer ~20 mins until soft.

Blend until smooth.

Adjust seasoning & swirl in coconut milk or yogurt if desired.

It’s nutrient-rich, anti-inflammatory, and perfect for cozy evenings. 🍂
