Doesn't this raw vegan lunch look vibrant?
This is just a simple and quick raw vegan lunch at home - photographed on the go, not for promotional purposes, but as a way of de-mystifying raw foods and making them very accessible.
Over the weekend, I made 10 dehydrator trays' worth of Beet Walnut "burgers" and have them on hand now for a quick healthy meal.
I didn't use any specific proportions, just threw together what I had:
Walnuts (about 8 cups)
Beets
Carrots
Broccoli
Spices (cumin, Italian, black pepper)
Coconut Aminos
Dehydrate for 6-8 hours at 106F.
You can substitute other nuts and/or seeds for walnuts.
They turned out delicious in addition to being filling and nutritious.
Raw foods are not anything to be afraid of - they are easier to handle than you'd think.
For "burger" patties, the rules of thumb are:
🌰 Use nuts and/or seeds or sprouted chickpeas
🌿 Activate nuts/seeds: soak for 8-12 hours, or better yet, sprout. If walnuts - soak for 2-4 hours. Then, dehydrate for a few hours. Activation is definitely an extra step, but it is super beneficial as it decreases antinutirient content, enhances nutrient bioavailability, and improves digestibility.
🥕 Grate or process vegetables of choice in a food processor. Great choices are: beet, carrot, broccoli. Zucchini is good, but mind it - it is watery. Greens such as spinach and kale may "burn" in the dehydrator if they are just chopped and not completely integrated into the dough.
🥜 Process the nuts in a food processor or blender. Dehydrating them after soaking helps to bring the "nuttyness" back along with their natural fattyness.
🫘 Add ground flax or chia seeds for stickiness.
🌱 Be generous with herbs & spices. They are not just for flavor - they have health properties and may, for example, help ignite the digestive fire.
🥬 Definitely complement the meal with a salad. Other components - optional.
Raw foods are true yogic foods that most of us can benefit from greatly - they are full of life, vibrancy, and higher consciousness.
