Blackened Salmon (Pan Seared) and Spinach/Mushrooms
Ingredients:
1/2- 1 cup Chopped spinach
3-4 Mushrooms
Fresh Salmon
4 Garlic Cloves
1 lemon
1 Teaspoon Cayenne Pepper
2 Tablespoons Thyme
1 Tablespoon Paprika
1 Teaspoon Salt
1 Teaspoon black pepper
Recipe:
Salmon
1. Lightly coat pieces of salmon with lemon juice
2. In a bowl combine Paprika, Cayenne, Salt, Pepper and Thyme
3. Sprinkle all over salmon, coat finely
4. Pan sear salmon 3-4 minutes on each side, be careful not to burn
Spinach
1. Boil water in a sauce pan
2. Add spinach, return to boil then let simmer on low for 2-3 minutes while covered.
3. In another pan, add sliced mushrooms, minced and diced garlic (a couple minutes after so as not to burn them) with vegetable oil and sauté
4. When finished, add the strained spinach and mix well. Can finish with salt, pepper, and garlic powder
